These Graham Cracker Cookies are a delicious and easy cookie to make when you just need something sweet but don’t want to make a whole production of it. They remind us so much of the popular Girl Scout Samoas, with sweet coconut and a hint of chocolate. They’re the perfect little treat to make with your kids, and are such a yummy after school snack. You’ve gotta love cookies that you can make with just a few simple ingredients. We actually made these cookies for a news show in Utah and everyone went crazy over them! They’re simple, made with ingredients you probably already have in your pantry, and are incredibly satisfying. Serve with an ice cold glass of milk, and you’ll have a tasty treat fit for any time of day! We promise, you’ll love them!
Four Ingredient Cookies
All you need for these scrumptious snacks are four simple ingredients: graham crackers, a can of sweetened condensed milk (we use fat free and it works great), some semi-sweet chocolate chips, and coconut. Simply mix together the first three ingredients and form into balls. Roll the balls into the coconut, flatten out just a little bit using the bottom of a glass or a spoon, and bake. The coconut toasts up beautifully and the chocolate melts just enough to make a gooey, yummy cookie!
Tips for the Best Graham Cracker Cookies
You could change up a few of the ingredients too! Switch out the chocolate chips for butterscotch chips, peanut butter chips, or white chocolate chips. Try drizzling a thin layer of glaze on the tops for an extra sweetness. To make a glaze, simply stir a little powdered sugar and milk together until there are no lumps. Serve hot right out of the oven, or chilled from the fridge. To store, keep them covered on the counter or in the refrigerator. They’ll stay nice and fresh for a couple of days. But, they never last that long at my house!

The recipe says 1 can of sweetened condensed milk. Is that 14 oz?
Yes!
These were fantastic and everyone came back for more! Thanks!
I’ve never seen these baked before, looking forward to trying that. We usually roll the balls( the crumbs, SCM, and chocolate chip) in coconut, then place in the freezer as a no-bake treat.
Ooh that sounds yummy too!
I’m waiting for these cookies to cool. In the information it says 12 servings but watching the video it appears that she is making about 20 cookies. I began mine with 12 cookies because that’s what the recipe seems to imply. However it looked like these were going to be way too big and I made 16 cookies instead. The last 4 were smaller and browned better. I think you should clarify your video and your instructions.
Sorry for the confusion – the number of cookies can depend on how big you want them to be. Hopefully yours still turned out! You could cook the bigger ones for just a bit longer next time.
Do you think these would turn out okay if I used butterscotch chips instead or chocolate?
Sure!
Can I use full cream condensed milk instead of the fat free condensed milk?
Absolutely!
These graham coconut cookies are a great hit! They’re also ready easy to make and will definitely cook them again!
