This avocado bacon and egg sandwich is a copycat of my all-time favorite sandwich at Fork in downtown Boise. It’s called the BAM Sammy. Bacon. Avocado. Mozzarella. BAM.

The BAM Sammy is one of my all-time favorite sandwiches to get at a delicious restaurant in downtown Boise called Fork. I can’t tell you how many times we have eaten at Fork. Everything we have eaten there has been so good. But the BAM Sammy is my go-to sandwich.
The combination of maple-marinated bacon, avocados, and fresh mozzarella (which forms the acronym BAM) is just heavenly. There are also tomatoes and fresh pesto, and I like to add the optional fried egg. The egg is a little extra but totally worth it. We decided to recreate it at home and it turned out fantastic.
Avocado Bacon and Egg Sandwich Ingredients
This avocado breakfast sandwich is layered with soft avocados, crispy bacon, sweet tomatoes, and a runny egg that makes this sandwich one of the best-tasting breakfast recipes out there! It is full of all your favorite ingredients. Enjoy this breakfast one bite at a time!
- Bacon – Cook your sliced bacon or use the microwaveable kind to help speed up the process. We like to use this bacon pan to help the bacon cook evenly.
- Maple syrup – This will tenderize the bacon as well as give it that sweet and savory flavor.
- Brown sugar – Add the sweetness to the bacon!
- Mozzarella cheese – Give this sandwich an extra melty cheese appearance and taste. Mozzarella cheese is known to be a creamy color that is smooth and is a bit healthy for you too.
- Avocados – Slices of avocado are evenly placed on top of the sandwich. This gives the sandwich more depth and flavor. Or mash it up and use the avocado as a spread.
- Tomatoes – Find a ripe tomato and slice it to fit perfectly on the bread. Thinner slices are best!
- Fresh pesto – Make a homemade pesto sauce or use a jarred version from the store. Take the BAM sandwich to the next level.
- Eggs – Sunny side up gives these sandwiches that ooey gooey taste and texture everyone loves from a restaurant.
- Bread – We used sourdough bread but use whole wheat or any slice of bread you prefer. A thicker artesian bread would also taste delicious!
- Pinch of kosher salt and black pepper – to taste
Additional Ingredients
Add a few extras to make the sandwich your own:
- Dijon mustard
- Green onion
- Fresh lemon juice
- Mayonnaise – just a little mayo mixed with dijon mustard is a good way to give the sandwich extra moisture and flavor.
- Hard boiled eggs, sliced
- Spinach
- Hot sauce
- Bagel seasoning
- American cheese or Pepper jack cheese
How to Make Avocado Bacon and Egg Sandwich
We love the idea of keeping all that delicious thick-cut bacon close together on this avocado bacon sandwich. It is the perfect combination and helps add even more flavor. Layer the ingredients together on a thick slice of a sourdough bun and enjoy this favorite breakfast recipe!
- Preparing the bacon – At least an hour before you start preparing your meal, mix together the maple syrup and brown sugar in a small bowl. Cut the bacon slices into halves, make sure they are separated from each other, and place them all in a large plastic bag or parchment paper. Pour the syrup mixture over the bacon and seal. Place the bag in the fridge to marinate.
- Cook bacon – Preheat oven to 400 degrees. After the bacon has marinated for an hour, line a cookie sheet with aluminum foil and top that with a wire rack/cooling rack. This will catch all the drippings. Arrange 6 small slices of bacon into a weave or you can cook the pieces in straight lines. Bake for about 20 minutes, or desired crispiness. Keep oven on.
- Cook – While the bacon is cooking, slice the tomatoes and avocados. Add a pat of unsalted butter to a nonstick skillet or frying pan and cook the eggs over medium.
- Bake – On another cookie sheet arrange the 8 slices of bread, 4 with sliced mozzarella cheese, and 4 with a layer of pesto. Bake just until the cheese begins to melt.
- Layer – Arrange a slice of cheese toast topped with tomato, bacon, egg, and avocado, and then topped with a pesto slice.
Tips and Variations
Of course, the restaurant version of this avocado egg salad sandwich is amazing, but you can make it even better at home. When it comes to layering all the ingredients on top of one another in this sandwich you will love the flavor combination!
- Bacon weave – Create a square weave out of the bacon before baking it. This gives that crisp bacon texture with some soft bites too! This will help lay the bacon perfectly on top of the sandwich.
- Swap out bacon for ham or turkey.
- Make it healthy – Use egg whites instead of whole large eggs with the yolk. This will alter the flavor and taste but will still be just the way you like it. Boil eggs over medium heat until they’re over easy or over medium.
- Protein – Switch to turkey bacon to help with all the types of bacon you are using.
- Cheese – Try it with cheddar cheese, Monterey jack cheese, or Swiss cheese for other variations. It’s like a grilled cheese sandwich but so much better!
- Paper towel – Yes! You will need a few once you take that first bite. It is hard to put this sandwich down once you get started. Enjoy!
- Serve the classic egg salad mixture over crackers or in a lettuce wrap.
Bacon Weave
Create a square weave out of the bacon by placing the bacon on a wire rack inside a baking sheet lined with parchment paper. Bake for 20 minutes at 400 degrees. This will help lay the bacon perfectly on top of the sandwich.

- 4 eggs 1 per sandwich
- 8 slices bread we used multi grain sourdough
- 4 slices mozzarella cheese
- ½ cup fresh pesto
Instructions
- Mix together the maple syrup and brown sugar in a small bowl. Halve the bacon slices, make sure they are separated from each other, and place them all in a large plastic bag. Pour the syrup mixture over the bacon and seal. Place the bag in the fridge to marinate for 1 hour.
- Heat oven to 400 degrees F. After bacon has marinated, line a baking sheet with aluminum foil and top that with a wire rack. Arrange 6 small slices of bacon into a weave, repeating with the remaining bacon, or you can cook the pieces normally. Bake for about 20 minutes, or until desired crispiness. Remove bacon but keep oven on.
- While the bacon is cooking, slice the tomatoes and avocados.
- Cook the eggs over medium.
- On another baking sheet, arrange the 8 slices of bread, 4 with sliced mozzarella cheese, and 4 with a layer of pesto. Bake just until cheese begins to melt, about 5 minutes.
- Arrange sandwiches with a slice of cheese bread topped with tomato, bacon, egg, and avocado, topped with a pesto slice.
- This recipe makes 4 sandwiches, you can adjust according to how many you actually need.
Notes
- Make sure your cooling rack is safe to use in the oven. Metal racks are fine, but if your rack has a nonstick coating, don’t use it because it can warp.
- You can use whatever bread you like. I used sourdough.
