You will need ribs, a creamy mixture for the potatoes, and toppings to garnish with. It is so simple to layer and comes together quickly!

  • Ribs – Boneless beef country-style ribs are just what you need to make this the best bbq twice baked potatoes.
  • Barbecue sauce – Make your own homemade bbq sauce or store-bought. Pick your favorite brand and kind and you will love how delicious these ribs turn out.
  • Potatoes – Medium sized russet potatoes are best! The outer skin holds together and can withstand the heat compared to other types of potatoes.
  • Butter – This butter will melt in the potato and give it that creamy taste and texture we all love.
  • Ranch dressing – Homemade ranch dressing or store-bought dressing sinks into the butter and potatoes for a creamy layer.
  • Sour cream – Thicken your cream mixture with softened sour cream.
  • Green onion – Cut into small pieces that are garnished on top!

How to Make Easy BBQ Twice Baked Potatoes

Layer the inside of a twice-baked potato with bbq, and a creamy mixture, and top it off with green onions and cheese! This can be a light dinner, a side dish, or an appetizer! Each step is simple to make and put together. It all comes together by layering each ingredient on top of each other!

  1. Cooking ribs – Place ribs in slow cooker and cover with BBQ sauce. Cook on low for 8 hours (or 4 hours on high). Remove from slow cooker and shred, return to slow cooker and keep warm until ready to serve. About an hour before serving bake potatoes.
  2. Baking potatoes – Take baked potatoes and cut an oval hole, lengthwise, from the top. Scoop out the potato, leaving a small amount of potato around the edges (you don’t want to scoop out too much and rip a hole in the skin).
  3. Add-ins – Place the potato “scooping” into a medium-sized bowl and add butter, ranch dressing, sour cream, salt, pepper, chives, and cheese.
  4. Layer the potatoes – Mash together with a fork until well mixed. Place mashed potatoes evenly back into the potato skins and make a depression in the top with the back of a spoon. Spoon a large scoop of shredded beef into the top of the potato and top with extra shredded cheese.
  5. Finish cooking – Place back in 350-degree oven for about 15 minutes or until potatoes are hot all the way through.

Suggestions for this Potato Recipe

Potatoes are so fun and delicious to make! Add in all the extra ingredients and make this bbq twice-baked potato recipe. It is so simple and can be made just the way you love it. Create the best potato just the way you like it!

  • Feeding a crowd – If you’re serving a crowd and want to make this as more of a side dish, just cube the potatoes after baking instead of scooping them out. Place the potatoes in a glass baking dish, top with the remaining ingredients, and bake as you would the twice-baked potatoes. So easy!
  • Lighter and healthier- To lighten things up you can leave out the ranch dressing and use light sour cream.
  • Extra sauce – If you need extra flavor, drizzle additional BBQ sauce over the top. It looks pretty, too!
  • Protein – You can easily swap the beef out for chicken, pork, or any other meat you like. Just follow the same method as the beef. Shred and serve over the potatoes.
  • Scooping – When scooping out the potato make sure that you don’t go too deep. You can use either a spoon or a cookie dough scoop to help make the perfect oval shape.
  • More toppings – Everyone loves bacon! Add chopped bacon, sliced red onion, or add garlic or onion powder to the cream mixture.
  • Potato flesh – Make sure that you have a sturdy potato skin that can withhold the heat of the oven and not fall apart. If you want a real twist of flavor and texture, try using sweet potatoes instead!

“This is really good! My family keeps on requesting it!”

Questions About Twice Baked Potatoes

Why are my twice baked potatoes gummy?

If your potatoes are gummy, it usually means they were either over or under-baked. Make sure not to wrap the potatoes with aluminum foil. This will make it harder for the potato to cook.

Why is it called “twice baked”?

They are called “twice baked potatoes” because the potatoes are being baked first, then you scoop out the middle of the potato leaving the flesh or potato skin intact. On the side, you will mash the scooped-out potatoes, put them back into the potato skins and recook for the second time.

What goes well with twice baked potatoes?

These are perfect as an appetizer or side dish. Beef them up with some bacon, cheese, or other favorite toppings and they are also great as an entree. My favorite way to serve them is as a hearty side with grilled meat – whether it be chicken, ribs, burgers, pork chops, you name it!

Storing Leftovers for Twice Baked Potatoes with BBQ Ribs

Store the baked potatoes in an airtight container using a lid in the fridge for four to five days long. Place the ribs in a separate airtight container and store them in the refrigerator as well. When ready to reheat place it in an air fryer, the stove, or a microwave to warm up until it is hot again.
