Your New Favorite Potato Side Dish
Take your potatoes to the next level with ranch dressing and cheese to make the best potato side dish. Simply combine tender potatoes with ranch dressing and shredded cheese to make this flavorful and fun side that taste great with so many meals! I promise, even your pickiest eaters are going to love this recipe.
Ingredients for Ranch Potatoes
- Baby red potatoes – these have a great fluffy, buttery texture. Perfect for roasting and baking.
- Ranch dressing – you can use store bought or my favorite ranch dressing (see recipe below)
- Shredded cheddar cheese – shred your own or buy the bag
- Green onion – for garnish
- Salt and pepper
My Favorite Ranch Dressing (Hands-Down)
I used to work at a restaurant called “Pizza Factory” when I lived in Utah. I started working there when I was 15 and worked there all through high school. To this day, it is still my favorite ranch dressing. Thankfully I made the ranch dressing there myself enough times (like hundreds of times, no joke) that I figured out how to scale the recipe to have at home. Trust me on this. This ranch is amazing and it will be your favorite ranch recipe forever. Here’s how to make it:

- 1 cup cultured buttermilk
- 1 ¾ c. Best foods Mayo (yes, this is more than what the packet says but trust me here)
Mix all the ingredients together in a blender or whisk together until smooth.
How to Make Ranch Potatoes
- Prepare potatoes – preheat your oven to 400. Clean your potatoes, and if you aren’t using baby potatoes, cut the potatoes in quarters.
- Par boil potatoes – bring a salted pot of water to boil. Par boil the potatoes for 8-10 minutes until they are just fork tender. It is important not to over boil the potatoes. - Dress potatoes – drain potatoes. Toss with salt, pepper, and ranch dressing.
- Bake – spread potatoes in a single layer on a baking sheet. Bake for 25 minutes.
- Add cheese – remove from the oven and sprinkle with a layer of cheese. Bake for an additional 5 minutes and then garnish with green onion. Serve hot.
What To Serve with Cheesy Ranch Potatoes
These potatoes are incredibly versatile and you can serve them with just about anything to make a full meal. Try them with any grilled protein. They are great with grilled chicken, pork chops, steak, any BBQ dish, roasted vegetables, and fresh salads.
Flavorful Additions
Try adding crumbled bacon, diced jalapeño (for spice), diced chiles, or different kinds of cheese (pepper Jack, Mexican blend, Colby Jack, Parmesan cheese). Swap green onion for chives for a fresh flavor, and add dill for more of that fresh, bright taste.
Different potatoes like Yukon gold potatoes would work fine because they have a similar buttery texture as red potatoes. But stay away from russet potatoes because they are starchy and tend to get mushy and crumbly when boiled and baked.
Avoid over boiling. This will keep your potatoes from taking on too much water and getting mushy.

- 1 9×13 baking dish
Ingredients
- 3 pounds baby red potatoes
- salt and pepper (to taste)
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/4 cup green onion (for garnish)
Instructions
- Preheat oven to 400℉Scrub potatoes and cut in half. If using full red potatoes, cut into quarters or 1 1/2" dices.
- Bring a pot of salted water to boil. Add potatoes and par boil for 8-10 minutes or until potatoes are just fork tender.
- Drain potatoes well and place in a large bowl. Toss with salt and pepper then add ranch dressing and gently toss until potatoes are completely coated with ranch dressing.
- Place potatoes in a greased 9×13" baking dish and spread potatoes out evenly. Bake in the preheated oven for 25 minutes.
- Add cheese and bake another 5 minutes or until cheese is melted over the top. Garnish with green onion and serve hot.
