Growing up, there was very little that a big bowl of our mom’s Homemade Chicken Noodle Soup couldn’t fix. She always seemed to know when we were sad, a little sick, or just in need of a savory pick-me-up. This soup recipe always made us feel better, probably because it was made with extra love. So put away the canned soup and whip up a batch of this easy chicken noodle soup recipe. It’s simple and so yummy!

Ingredients in Homemade Chicken Noodle Soup

Just a few wholesome ingredients and a large stockpot and you will have some serious comfort food simmering away in no time! Here’s what you need for this delicious soup:

  • Water – about six cups of water or chicken stock. You can also use low-sodium chicken broth.
  • Chicken breasts – I like to use boneless, skinless breasts, but you can use chicken thighs or bone-in chicken breasts. Just make sure to remove the bones after the chicken is cooked and before you add the other ingredients.
  • Salt – at least one teaspoon, and more to taste
  • Onion – one large yellow onion, diced
  • Carrots – about one cup of thinly sliced carrots
  • Chicken bouillon granules – or two cubes of bouillon
  • Celery – about half cup finely diced. This is optional but super yummy!
  • Egg noodles – we love Country Pasta Homemade Style Egg noodles (you can also use homemade noodles)

Recipe Substitutions

  • Very few herbs or spices are needed in when making this Chicken Noodle Soup from scratch, because the chicken broth and vegetables is so flavorful. But you could add parsley, oregano, garlic cloves, rosemary, thyme, lemon juice, cayenne pepper or a bay leaf for deeper flavor.
  • Switch out chicken for turkey! It’s a great recipe to make after Thanksgiving to use up those turkey leftovers.
  • Stir in spinach, kale, peas, or any other veggies you like.

Make it in the Instant Pot or Slow Cooker

This recipe can easily be made in the crock pot OR the instant pot! The recipes are all very similar but with a few differences. It’s deliciously comforting either way.

Mom’s Homemade Chicken Noodle Soup

Ingredients

  • 10 cups water
  • 4 chicken breasts (boneless, skinless)
  • 1 teaspoon salt
  • 1 large onion
  • 1 cup carrots thinly sliced
  • 2 tablespoons chicken bouillon granules
  • 1/2 cup celery thinly sliced
  • 10 ounces Country Pasta Homemade Style Egg Noodles (you can also use homemade noodles)

Instructions

  • In a large stock pot combine water, chicken and salt. Boil until chicken is cooked completely through.

  • Remove the cooked chicken onto a plate to cool. Keep the broth. Cover the chicken with plastic wrap so it doesn't dry out. Refrigerate.

  • Strain the broth to get a nice clear broth for the soup and put it back into the stock pot.

  • Peel onion and chop into chunks. Combine ½ cup of water and onion in a food processor or blender. Puree for 30 seconds, add to the chicken broth.

  • Add carrots, chicken bouillon granules, and celery. Bring the broth to a boil.

  • Once the broth is boiling, add egg noodles. Cook the noodles until done, 15-20 minutes.

  • While the pasta is cooking, cut the chicken breasts into small bite-sized chunks. I like to break and tear it into chunks.

  • Once the noodles are cooked, take off the heat and add the bite-sized pieces of chicken breast.

  • Add bouillon granules (instead of salt) and pepper to taste. Garnish with fresh parsley.

Notes

  • If you need to add more liquid to the soup, add a can of Swanson’s chicken broth or water and season with more of the Wyler’s chicken bouillon granules to taste.

    I haven’t ever been to your site before, but I have heard of it. . . I googled a chicken noodle soup recipe using country pasta, and your site came up a few from the top. We LOVED this soup!! I love that you blend the onions- I’ve never seen a version of this soup like that. It tasted wonderful, and my 6 and 4 year-olds gobbled it up. Thank you! Your other recipes look wonderful too.     Love your recipes!! Just made this soup. I don’t know if my chicken breasts were too big and therefore I had to boil them longer..but i didn’t have 6 cups of water/broth left after boiling them and definitely had to add more water and chicken bouillon granules at the end or i would have had stew. ( i added about 4 more cups of water). BUT don’t get me wrong, it looks delicious and i can’t wait to eat it!! 🙂
