The Best Instant Pot to Use
Pressure cooking in the Instant Pot is all the rage right now, and for good reason! You can cook up just about anything in a fraction of the time you can cook something on the stove or in the oven. If you are new to Instant Pot cooking there is a little bit of a learning curve, but not to worry, all of these recipes are tried-and-true reader favorites. We walk you through each recipe so you will have success right off the bat. For all of these recipes, I used a 6-quart 7-in-1 Instant Pot but you can use any 6 or 8-quart Instant Pot pressure cooker. The times and pressure will remain the same.

Either way, it is always delicious. For this recipe, we use a boneless chuck roast but there are several different cuts of meat you can use.

Instant Pot Baked Potatoes come together so fast, and you don’t have to heat up your house with the oven. The potatoes come out so fluffy every time when use an Instant Pot. Plus, since you don’t wrap them in tin foil, the skins stay pretty crispy. Sometimes if we want really crispy potato skins, we will broil the baked potatoes for a few minutes with some butter, salt, and pepper rubbed on the outside.

I love finding new things to cook in my Instant Pot, and these mashed potatoes are no exception. It is such an easy recipe. You can seriously drop the potatoes and water in the pot and forget about it until the timer goes off. I especially like this method because it frees up your stovetop for other things. On big holidays like Thanksgiving, I need all the stovetop space I can get.
Rice in the Instant Pot
The cooking time of rice in the Instant Pot purely depends on what variety of rice you are cooking. White rice only needs a few short minutes. This includes long-grain white rice, Jasmine, and Basmati. Short-grain white rice such as sushi rice only needs slightly more time. There is a big jump from white rice to brown rice, wild rice, red rice, and black rice. These need a lot more time or they will be crunchy. This Instant Pot Mac and Cheese recipe is the quickest, easiest dinner that your whole family will love. It tastes a THOUSAND times better than boxed mac and cheese because it is made with real food (I don’t even want to know what that powdered “cheese” is made out of). I could not believe how easy it was to put together. I threw all the ingredients in the pot and it cooked while I did my makeup.

Instant Pot Apricot Chicken

Equipment
- Instant Pot Pressure Cooker
Ingredients
- 4 small chicken breasts
- 1 cup apricot preserves
- 1 cup Catalina salad dressing (or Russian dressing)
- 3 tablespoons Dijon mustard
- 1 package dry onion soup mix
Instructions
- Combine apricot preserves, Catalina dressing, dijon mustard, and dry onion soup mix in a small mixing bowl.
- Put ⅓ cup water in the Instant Pot. Place chicken in the water.
- Pour apricot mixture over the top of the chicken. Place lid (make sure release tab is set to "sealing") and cook on high pressure for 15 minutes.
- Allow to natural release for additional 5 minutes. Quick release and remove chicken. Spoon excess sauce from the Instant Pot over the chicken before serving.

I love that you use catalina dressing, it’s the only dressing my mother will use on salad so I will have to make her this! I also am still working on perfecting my instant pot meals and this looks simple to try.
