Sandwiches with Leftover Sliced Steak
I came up with these yummy steak sandwiches for something different to do with our leftover delicious New York Steaks. These tasted amazing! How can you go wrong with balsamic sautéed red peppers, gorgonzola cheese crumbles, and creamy pesto mayo? The only thing I feel bad about now is that I only had enough leftover steak to make one! We are going to have to have steaks again and make extra so I can have more of these steak sandwiches. And this time, maybe I will even share one with my husband.
Ingredients in this Steak Sandwich Recipe
- Grilled steaks (we use leftover steak)
- French sandwich rolls
- Mayonnaise
- Fresh pesto
- Red bell peppers
- Balsamic vinegar
- Gorgonzola cheese crumbles
- Spinach arugula lettuce mix
Mix It Up
You aren’t limited to just these ingredients, you can definitely swap things out if there’s something you don’t like! Here are some other ingredient ideas to change up the flavors:
- Grilled Onions
- Sautéed Mushrooms
- Roasted Garlic
- Green Peppers
- Cheddar Cheese, Swiss cheese, or Provolone Cheese
- Fried Egg
- Ciabatta Bread
- Rémoulade Sauce

Secrets to Success
There are a couple of key things to making these really good! First, be sure to follow the re-heating instructions for the steak. Whatever you do, don’t nuke your steak in the microwave and ruin it. Second, try to get a good, aged balsamic vinegar. It is worth the investment, trust me!

One of the best things to pair with a delicious steak sandwich is a nice bowl of soup. Here are a few soups to try if you’re looking to make this sandwich into a meal.
Leftover Steak Sandwich
Ingredients
- 2 grilled steaks (we use leftover steak)
- 4 french sandwich rolls
- 1/2 cup mayonnaise
- 1/4 cup fresh pesto
- 2 small red peppers cored, seeds removed, and sliced thin
- 2 tablespoons balsamic vinegar
- 1/2 cup gorgonzola cheese crumbles
- 1 cup spinach arugula lettuce mix
Instructions
- Combine the mayonnaise and pesto in a small bowl until well blended, then keep cold in the refrigerator.
- Slice the leftover steak and warm the slices in a small fry pan over the stove on medium heat. You don't need to overcook them, just warm them up, then remove from heat and onto a plate.
- In the same fry pan, add a little vegetable oil and the red pepper slices. Cook over medium heat until the red peppers begin to soften. Drizzle on some balsamic vinegar and cook a few more minutes, then remove from heat.
- Open the sandwich rolls and spread a layer of pesto mayo on both sides of the roll. Top the bottom slice with the warmed steak slices, gorgonzola cheese crumbles, sautéed red peppers, and lettuce mix. Add the top bun and serve. Makes 4 sandwiches.

Such a great way to use up leftovers! Also love the tip about not using the microwave to reheat the meat! Pan fried is the best!
Steak sandwiches are always great. I agree with the cooking of the steak but I prefer to load the bun with thinly sliced onions, tomato and chopped lettuce. For the sauce I mix about half a cup of ketchup and then start adding McIlhenny tobasco , starting with a teaspoon and keep adding a few drops at a time, stirring and tasting, until it has a little bite. Spread on one or both sides of roll. Definitely use the French rolls or something similar – don’t use hamburger buns.
