When using ground beef or stew meat in a crockpot soup, you want to cook the meat before adding it to the crockpot. Ground beef should be browned and seasoned with salt and pepper before adding it to the crockpot. Stew meat is best when floured and seared before adding it to the crockpot. This seals in the juices and flavor while it finishes cooking at a low temperature. The result is tender, melt-in-your-mouth beef in your soups and stews.

Crockpot Beef Stew, which we also call Irish Beef Stew, is one of our favorite slow cooker soups to make on a chilly evening. The simmering stew meat cooks low and slow in the crockpot, the savory smell permeating the house. It’s such a delightful fragrance to come home to! This recipe is similar to a traditional Irish stew; the only difference is we don’t add beer to the broth. No matter the occasion or season, this stew is warm, comforting, and filling.

Easy “Cheater” Chili

This chili recipe is a family loved favorite from as far back as I can remember! It’s my dad’s very favorite meal on cool autumn evenings. My mom made it at least once a week during the fall and winter and always on Halloween night. The best thing about this recipe is its simplicity. No soaking or boiling beans, no long, all day process. This chili comes together quickly, using a couple of “cheater” ingredients that we always have on hand. Delicious on its own with a side of corn bread, or served over Navajo Tacos or chili cheese fries, this is one chili recipe you’ll hang onto for years to come!

Cafe Zupas is famous for its delicious soups and for good reason. All of the soups at Cafe Zupas are amazing, but this one is my very favorite. It is so convenient to make in the crock pot. I have been working on a replica for Chicken Enchilada Chili for a while now and I feel like I finally have it. My husband actually prefers this version now. This soup is great because you can serve it as a side or as the main dish. It makes a great lunch or dinner and your kids will love it.

Zuppa Toscana is one of our favorite soups at Olive Garden, and this copycat recipe is spot on. It is the perfect for the cold days of fall and winter, but really it is great any time of the year. The soup is a creamy and hearty with a bit of a kick. If you like some heat in your soup, be generous with the red pepper flakes. For a more mild flavor, a little goes a long way. If you like Olive Garden’s Zuppa Toscana soup, you are going to love this (I think it tastes better than Olive Garden’s Zuppa Toscana recipe — it is more creamy and flavorful). Ham and Potato Soup is an easy comfort soup loaded with cheesy goodness! Add peas or corn to this soup for some added vegetables. A delicious dinner any night of the week!

Ingredients

  • 3 cups ham diced
  • 3 potatoes peeled and diced
  • 30 ounces chicken broth (2 cans)
  • 1/2 cup butter
  • salt and pepper to taste
  • 2 cups milk
  • 2 pounds velveeta cheese

Instructions

  • Add all the ingredients EXCEPT the milk and velveeta cheese to a crockpot.
  • Cook on high for 2 ½ to 3 hours or until potatoes are tender.
  • Add in the milk and velveeta cheese. Stir well, and cook for another 10 to 20 minutes or until cheese is fully melted.

Notes

Recipe Tips:
  • This recipe is especially good with diced up leftover spiral ham.
  • Add veggies like peas, corn, or broccoli to give the soup added nutrients.
  • Serve with rolls, breadsticks, or corn bread.
