Ingredients in Roasted Baby Potatoes
- Golden Baby Potatoes – you can also use fingerling potatoes or small Yukon Gold potatoes
- Avocado Oil – or another oil with a high smoke point like peanut oil, sunflower oil, or canola oil. Extra-virgin olive oil has too low of a smoke point for this recipe.
- Kosher Salt and Black Pepper
- Dried Thyme – see below for other seasoning ideas, but we love dried thyme!

Place the potatoes cut side down on the parchment paper at first, then flip them halfway through cooking. The potatoes should flip easily with a metal or very thin spatula.

Ingredients
- 1 pound golden baby potatoes
- 2 Tablespoons avocado oil
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
Instructions
- Preheat oven to 425. Slice the potatoes in half. If there are some larger potatoes in the batch, you might have to cut them into quarters. Try to make all the potato pieces similar sizes. Place in a large bowl with avocado oil, pepper, and salt. Toss to combine.
- Place a piece of parchment paper on a baking sheet. Place the potatoes cut side down on the parchment paper. Sprinkle with dried thyme.
- Bake for 30 minutes, flipping halfway through. Broil the potatoes on high for a few minutes at the end for extra crispiness. Potatoes should be fork tender with a crispy outside and creamy inside.
- Serve immediately.
