What started as a simple food truck in Austin, Texas has exploded into over 110 locations in 14 states. I’m talking about Torchy’s. If you’ve tried their tacos or queso, you’re one of the lucky ones. Intense, fresh flavors and interesting ingredients are constants on the menu. Just mix the following ingredients together to make the best copycat Torchy’s queso:
- Velveeta – Torchy’s uses Land O Lakes Extra Melt in their recipe, but this product is only available to those with a restaurant license and Velveeta is the next closest option.
- Salsa Verde
- Green Chiles
- Valentina Hot Sauce
- Heavy Cream
- Cilantro
- Guacamole
- Cotija Cheese
Variations
- Try making fresh guacamole and dropping a big spoonful in instead of the chunks of avocado. This is an option at the restaurant and it tastes delicious!
- Add fresh lime juice for a zing. There can never be too much lime!

- 1 (16-ounce) container salsa verde
- 1 (4.5 ounce) container of diced green chiles
- 1 pound Velveeta cheese, roughly cubed
- ⅓ cup heavy whipping cream
- 2 tablespoons Valentina hot sauce, plus more for serving
Garnish
- cilantro
- guacamole
- cotija cheese
Instructions
- Place salsa verde, green chiles, and cheese cubes in a large pot.
- Heat over medium until the cheese melts. Then stir in heavy cream and hot sauce. Let simmer for a few minutes.
- Serve with more hot sauce, cilantro, guacamole, and cotija cheese.
Notes
- Store leftovers in an airtight container in the fridge.
- If your queso is a little thin, you can add about ⅓ cup shredded mild cheddar cheese to thicken it.
- Adjust the amount of hot sauce depending on how spicy you want your queso.
