This Avocado Toast, in all three ways, is a high protein, healthy breakfast. A breakfast that will keep your energy up until lunch! It is the perfect way to start your day! With school starting up again this month, quick and easy breakfasts are a must! But even though you are in a hurry in the mornings, you shouldn’t skimp on good nutrition. A healthy breakfast can really keep you feeling full and your mind sharp!

Ingredients in Avocado Toast

  • Toast – I like to use a hearty, whole grain bread, but this tastes great on any bread! I have had it on sourdough, white bread, rye bread, and even sometimes on a hash brown patty.
  • Avocado – make sure your avocados are perfectly ripe by removing the stem at the top. If you see green under the stem, then it is ripe! You can speed up the ripening process by storing the avocados on the counter in a closed brown paper bag.
  • Toppings – keep it simple by adding a sprinkle of flaky sea salt, black pepper, and red pepper flakes or go all out! Try an egg, tomatoes, sprouts, radishes, paprika, feta cheese, Everything But the Bagel seasoning, bacon crumbles, pickled red onions (its so easy to make your own!), fresh basil, lemon juice, lime juice, dill, lox, capers, or drizzle with honey!

Anyone else’s mom tell them that breakfast is the most important meal of the day? Whether you heard that advice from your mom, a teacher or anyone else, it’s something to keep in mind. If you’re eating breakfast, you need to make sure it is something healthy to kick things off right. Don’t blow this most important meal on something sugary or unsatisfying. That’s where the perfect Avocado Toast comes in!

Variations

This delicious avocado toast recipe is packed with healthy and tasty ingredients and is REALLY simple to throw together. You can stick with just the classic mashed avocado, salt, and pepper, or step it up! You can add some cherry tomatoes and a sunny-side up egg for a little open faced sandwich. Or, if you’re looking for something a little fancier, you can slice the avocado and add some feta cheese, honey and red pepper flakes. Any way you make it – it is amazing!

Also a note on the toast, try to get a good, grainy bread to toast up so that it doesn’t get soggy! I used some whole wheat bread from Great Harvest that worked really well for this recipe. But I have also used a nine grain and other breads that have worked well too.

  • 1 slice whole grain toast
  • 1/2 avocado sliced or mashed
  • salt and pepper to taste
  • red pepper flakes to taste

For Avocado Toast with Egg

  • 1 egg cooked the way you like it
  • 5 cherry tomatoes sliced
  • salt and pepper to taste

For Honey Feta Avocado Toast

  • 1 ounce feta cheese
  • 1 tablespoon honey
  • red pepper flakes

Instructions

Basic Avocado Toast

  • Remove half an avocado from its shell and pit and place it in a small bowl. Lightly mash it with a fork and add salt and pepper, or slice it.

  • Spread the avocado mixture over the toast and top with red pepper flakes.

  • Remove half an avocado from its shell. Lightly mash it with salt and pepper, or slice it.

  • Spread the avocado over the toast and top with sliced cherry tomatoes, egg, salt, and pepper.

Honey Feta Avocado Toast

  • Remove half an avocado from its shell. Lightly mash it with salt and pepper, or slice it.
