If you haven’t tried this easy recipe for the famous Sweet Pork Salad yet, you are in for a treat! We LOVE Cafe Rio and Costa Vida – and we’re very picky about our Cafe Rio sweet pork.

This recipe tastes exactly like the restaurant version, but so easy because you can make it right at home! We also played around with the rice, the beans, and the house ranch dressing. Finally, we nailed it! This recipe tastes exactly like having Cafe Rio take-out. You can even use a lot of these ingredients to try and imitate Cafe Rio’s tacos, quesadillas, enchiladas, or nachos. Ingredients in a Sweet Pork Salad

This recipe has a lot of ingredients and a lot of separate recipes within the recipe. Don’t be intimidated! If you are wanting to simplify, you can just make the sweet pork and the dressing and get everything else store-bought. You can also make the beans, rice, pork, and dressing all a day or two before hand to make assembly quicker.

  • leafy green or Romaine lettuce (not iceberg)

What is the Difference Between the Creamy Tomatillo Dressing and the Cilantro Lime Dressing?

We love both of these dressings so much – it is always hard to choose! They are both made with tomatillos, cilantro, and lime so the basic flavor is the same. The difference is that the Ranch Dressing is thick and creamy like a traditional ranch dressing. The Cilantro Lime Dressing is more of a vinaigrette. It really just comes down to preference!

How many people can I feed with this recipe?

The recipe below is the proportions for one salad. However, if you make up all the recipes (rice, beans, pork, etc.) it can make 4-6 salads, depending on how hungry people are.

Can I use chicken instead of pork?

When you are ordering your salad at Cafe Rio, you have several different options as far as the meat goes. Not just pork. You can get it with grilled chicken, shredded chicken, shredded beef, or steak. Any of these work well with the salad!

As far as preparing the chicken the same way as the pork, I wouldn’t recommend it. They are two totally different types of meat and it really won’t taste the same. If you are going to use chicken, my favorite way is grilled and sliced.

  • Lay a tortilla in the bottom of an aluminum tin, a bowl, or plate. Sprinkle cheese on it, and put in the oven at 375 for about 5 min or until the cheese is melted.

  • Remove from oven and add rice, beans, and pork.

  • Next add the lettuce. Top with pico de gallo, guacamole, tortilla strips, cilantro, and Cotija cheese.

  • Serve with the cilantro ranch or vinaigrette dressing and enjoy!

Recipe Tips:

  • Get 9″ round Disposable Foil Pans for your burritos for the full restaurant effect:(just like what Cafe Rio uses)
  • The Ranch Dressing is thick and creamy like a traditional ranch dressing.
  • The Cilantro Lime Dressing is more of a vinaigrette dressing.
  • If you are wanting to use a different dressing I would recommend a chipotle ranch or a balsamic vinaigrette.

  • We prefer to store the leftovers in separate airtight containers in the fridge. Leftover sweet pork can also be stored in the freezer, thaw in the refrigerator when ready to use.

    I tried your recipe with a few variations and I got really good reviews 🙂 I am not able to eat it due to health issues but I remember how good it was. I would go there at least once or twice a week when I worked near one. Then it closed 🙁

    Thank you for the recipes Erica! Here is my feedback after making these. I know you posted this a long time ago, so maybe you don’t even care! Haha! But here it is anyway! The Cilantro Lime Rice – I think you can omit the sugar. I have tasted Costa Vida and Cafe Rio’s rice and it doesn’t taste sweet to me. Also, I think the ratio of liquid to dry rice is incorrect – usually rice is 1 part uncooked rice to 2 parts water. So when I made the rice the 2nd time, I increased the uncooked rice to 1 1/2 cups and it turned out well. On the Black Beans – I think you can just omit all of those other ingredients and just use the beans straight from the can. Cafe Rio and Costa Vida’s beans taste pretty plain jane to me. Of course, if you want to jazz them up, then more power to ya! 🙂 But if someone is short on time, they can just use plain old black beans. Also, I think that is too much tomato juice for the beans. They were very soupy! Of course, I did multiply the recipe, so that could have exacerbated it. If I made them again, I would use half the amount of tomato juice. I think that the Black Beans recipe would make a great base for chili, however. 🙂 Again, thank you for posting these recipes! Overall it turned out very well.

    For what it’s worth, Costa Vida’s Sweet Pork recipe includes butter. I know because I have a serious allergy and they had to tell me that. Confirmed with their executive chef. (Can’t imagine why it’s necessary, but for any purists out there trying to absolutely nail the recipe, thought you’d want to know.) 🙂 Thanks for sharing your versions!! “:)

    I love these recipes and I have made it several times. I thought there was a little something missing in the pork.. I added a tsp. of cumin. YUM! I am making this recipe for the 5th time.

  13. @J&L — I had no idea about the jalapenos!!!! That is great to know because we grill jalapenos all the time. Sometimes they are SUPER hot and sometimes they are pretty mild and I never knew why. NOW I know how to tell! THANK YOU!!!!

    BUT I also saw the post about the jalapeno without seeds being too spicy and I have an answer! The older the jalapeno, the spicier it is. So how do you tell? Jalapenos as they age get fine, white lines or stripes on their skin. The more white stripes, the older and spicier it is.

  15. How many people does the salad recipe feed? We've tried the pulled pork and it is the best recipe I've tried! Definitely the closest to the real thing! BUT we're wanting to do the salads for a dinner party and are not sure how many the recipe feeds.
