Melt-in-Your-Mouth Comfort Food at Its Finest

There’s nothing quite like coming home to the irresistible aroma of a slow-cooked meal. This Slow Cooker Pork Roast with Potatoes and Carrots is my go-to for an easy, hearty dinner that never disappoints. It’s a true “set it and forget it” recipe, perfect for busy days when you want a delicious homemade meal without all the fuss. Plus, the pork turns out melt-in-your-mouth tender, and the veggies soak up all the savory juices—comfort food at its finest!

The best part about this dish is that it’s incredibly versatile. You can swap in different veggies, adjust the seasonings to your taste, or even add more protein if you’re feeding a crowd. No matter how you customize it, this recipe always delivers a flavorful, satisfying meal that has everyone racing to the dinner table.

I love using my slow cooker for meals like this. There’s nothing better than letting dinner cook itself while I focus on other things. And an added bonus – it fills the home with a rich and savory aroma!

Ingredients for the Best Slow Cooker Pork Roast

This classic combination of ingredients makes for a perfect, foolproof pork roast. Just a little prep, and your slow cooker does the rest!

  • Pork roast – A 3 to 4-pound roast fits perfectly in my slow cooker.
  • Oil – Use olive, canola, or vegetable oil.
  • Potatoes – Quartered red or russet potatoes work best. These will go around the sides of the crockpot.
  • Carrots – Baby carrots are easiest, but you can also slice fresh carrots.
  • Onion – Adds deep, sweet flavor when cooked. Cut into chunks or slices to add in with the vegetables.
  • Cream of mushroom soup – Use homemade or store-bought for a rich, creamy base.
  • Onion soup mix – A simple packet of seasoning that enhances the dish with a ton of flavor.

How to Make Slow Cooker Pork Roast

  1. Sear the Pork: First things first, heat up your oil in a skillet over medium-high heat. Sear the pork roast on all sides until it’s nice and brown. This step is super important for flavor! Then place the roast in a crock pot.
  2. Prep the Other Ingredients: Mix the cream of mushroom soup and onion soup mix together in a medium bowl. Chop up your potatoes and onions. If you’re using fresh carrots, slice them up too. Add the veggies to the bowl of soup mix.
  3. Layer It Up: Now, it’s time to load up the slow cooker. Pour the veggie and soup mixture over the roast in the crock pot.
  4. Set It and Forget It: Put the lid on and cook on low for 8-10 hours, or on high for 4-5 hours. The pork should be super tender and fall-apart when it’s done.
  5. Serve It Up: Once it’s cooked, carefully remove the pork roast and veggies. You can shred the pork with two forks if you like. The sauce in the slow cooker makes a delicious gravy!

Extra Veggies to Try

Want to mix things up? These veggies make great additions to your slow-cooked pork roast:

  • Butternut squash
  • Sweet potatoes
  • Parsnips
  • Mushrooms
  • Celery

Flavor Variations and Additions

If you’re in the mood to experiment, try one of these delicious twists on the classic pork roast:

  • BBQ Pork Roast: Brush with BBQ sauce for a smoky-sweet flavor.
  • Asian-Inspired Pork Roast: Marinate with soy sauce, garlic, ginger, and a touch of honey or brown sugar for a savory and slightly sweet taste.
  • Mediterranean Pork Roast: Season with olive oil, lemon juice, oregano, thyme, and rosemary. Serve with a splash of balsamic vinegar or a balsamic reduction.
  • Tex-Mex Pork Roast: Spice it up with chili powder, cumin, garlic powder, and paprika.
  • Teriyaki Pork Roast: Use soy sauce, brown sugar, garlic, and pineapple juice for that classic sweet and savory teriyaki flavor.
  • Apple Cider Pork Roast: Add apple cider, cinnamon, cloves, and nutmeg for a comforting fall-inspired twist.
  • Orange-Ginger Pork Roast: Brighten it up with fresh orange juice, ginger, garlic, and a splash of soy sauce.
  • Mustard & Honey Pork Roast: A sweet and tangy glaze made with Dijon mustard and honey.
  • Herbed Pork Roast: Rub the pork with a blend of fresh or dried herbs like thyme, rosemary, sage, and parsley for a fragrant and herbaceous taste.

Picking the Perfect Pork Cut

Not all pork cuts are created equal when it comes to slow cooking! For the best results, go with boneless pork shoulder or pork butt. These cuts have the right amount of marbling, ensuring your roast stays juicy and full of flavor. Boneless pork shoulder or pork butt is also perfect for shredding or pulling, making it ideal for pulled pork sandwiches or serving over rice, potatoes, or with vegetables.

“Love a good crock pot recipe! This is comfort food at its best! Not only is this meal easy to prepare but it is also very delicious!”

This recipe was a keeper. The simple gravy was wonderful. I thickened it on the stove once the roast was ready. My family loved it.

I probably shouldn’t comment til my roast is done. That being said, I’m at the 4 hour on low point. I’m using a 2.75 lb pork loin. I’m using more onions and carrots than called for, plus added some celery since the roast is slightly smaller than suggested and we LOVE veggies. What I’m finding is that this needs a little liquid. I opened the slow cooker to quickly move the veggies around and found that VERY little liquid has cooked out and the mushroom soup mixture has not loosened up and given off any liquid. Potatoes and carrots that were resting against the side of the crock are dry and stuck to the side. So, I added about 1/2 cup of not water and have the lid locked back down. Will try to update review once it ‘s all done

    1. Try adding a little milk to your soup next time it helps it in making the gravy also and it doesn’t dry up so easily also milk is a good tenderizer both before cooking or during I always add milk just throw pork roast in and pour cream soup and milk over it with the spices added to soup of course and it’s good everytime.

Love a good crock pot recipe! This is comfort food at its best! Not only is this meal easy to prepare but it is also very delicious!

    1. The cream soup is a great way to make your pork tender I use this recipe all the time and it’s good everytime I don’t add my veggies I like to cook them separately for their own flavor

  7. I don’t have a crock pot, but want to try this. Any suggestions for cooking in the oven or over a burner?
    Thanks!

    1. Yes! So, follow the instructions for browning the meat, and then you can either cook it in the oven or on the stove top. For the oven, use a large pot with a lid and bake at 350 for about 3 hours. For the stove top, use a large pot with a lid and cook it on low heat/a simmer for about 3 hours. Hope this helps!

I made this for dinner tonight, and it was honestly the best pork roast I have ever made! I followed the ingredients and directions, plus a can of chicken broth, and minus the whole onion because I forgot to buy it (!!!) but it came out so good, cooked it on low for 5 & 1/2 hours, then turned it up to high for the last hour. We all enjoyed it, thanks for posting your recipe! 😊

This is such an easy and delicious meal, my family loved it! The pork cooked up tender and juicy. This is one I will make again and again!

I love coming home to a yummy dinner from the crock pot! This pork is top of the list, it’s flavorful and juicy and makes great leftovers too!

    1. You definitely can use some stock or broth if you would prefer. Beef broth might taste better than chicken broth but you can use whatever you prefer!

    2. I think your supposed to use a can of mushroom soup and then add the onion soup powder to it, that’s what im going to try

    3. The husband got a bone in pork shoulder 🤦🏼‍♀️ does this work for this recipe?! Should I cook linger or different level or add liquid?! It’s already in the pot, just put it in! HELP!!! Lol

      1. I’m just seeing this, I’m sorry! How did it turn out?? We haven’t tried it with bone-in pork shoulder.

        1. Will a pork loin work with this recipe? I don’t want it to fall apart but rather be able to slice it. Thanks.

          1. I haven’t tried it with a pork loin, so I’m not sure how that would turn out. Let us know how it goes if you try it!

    4. Per the recipe, mix the dry soup mix with the canned soup, then mix with the vegetables to coat them. It is ‘gloppy’ but the juices from the pork roast will make a nice gravy. Be sure the veggies aren’t left on top of the roast or they won’t cook enough.

    5. I’ve got mine in the crock pot now for over 8 hours and there is plenty of liquid in just from the veggies and meat

    1. You can use cream of chicken or cream of celery for a similar taste and texture. Thanks for asking!
