  • Artichoke Hearts – I used canned, but not marinated, artichoke hearts. Again, I also squeezed out all the extra water with a paper towel.
  • Cheese – You can change up the cheese in this recipe based on what you like. However, make sure you have one really melty cheese like shredded mozzarella cheese or pepper jack, and one really flavorful cheese like Parmesan cheese, Romano, or Gruyere.
  • Garlic – Fresh is always best, but you can use jarred minced if needed.
  • Lemon Juice – Again, fresh will taste better, but bottled is fine.
  • Greek Yogurt – Greek yogurt adds creaminess and tang. You can also substitute for sour cream or mayonnaise.
  • Cream Cheese – Full-fat cream cheese gives this dip the best texture and flavor.
  • Spices – I like to keep it simple with kosher salt and black pepper.

Ingredients

  • 10 ounces fresh spinach
  • 14 ounces artichoke hearts
  • 1 cup pepper jack cheese shredded
  • 1/2 cup parmesan cheese shredded
  • juice of ½ a lemon
  • 2 cloves garlic minced
  • 1 cup Greek yogurt
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 ounces cream cheese room temperature

Instructions

  • Roughly chop the fresh spinach. Drained the artichokes and press with a paper towel to remove excess water. Place all the ingredients in the crock pot except the cream cheese. Stir together until everything is combined.
