Ingredients

  • 1 box Holiday Funfetti Cake Mix
  • 4 egg whites
  • 1/3 cup oil
  • 1 cup milk
  • 1/3 cup mayonnaise
  • 2 teaspoons vanilla
  • 1/2 teaspoon almond extract

For the frosting

  • 1 cup butter softened (or ½ pound butter)
  • 5 cups powdered sugar
  • 1 Tablespoon vanilla extract
  • 1/2 Tablespoon cocoa powder
  • Yellow and green food coloring
  • Sprinkles

Instructions

  • Preheat oven to 350.
  • In a large bowl, mix cake mix, egg whites, oil, milk, mayonnaise, vanilla, and almond extract. Stir until combined.
  • Line two muffin pans with cupcake liners.
  • Fill liners 2/3 full and bake for 18-20 minutes.
  • While cupcakes are baking, cream the butter in a large bowl.
  • Add powdered sugar one cup at a time, stirring well and scraping the bowl between each cup.
  • Add vanilla extract, mix until combined.

For the chocolate frosting

  • Take out ¼ cup of vanilla frosting and place in a small bowl.
  • Add ½ Tablespoon cocoa powder and mix until combined.

For the yellow frosting

  • Take out ¼ cup of vanilla frosting and place in a small bowl.
  • Add about 5-6 drops of yellow food coloring and mix until combined.

For the green frosting

  • Add about 12-15 drops of green food coloring to the remaining vanilla frosting.
  • Frost cupcakes and add sprinkles. Lay out the Christmas tree design on a large platter. Enjoy!
