Crispy, creamy, rich, and delectable, this recipe is ready to be devoured. There’s something about the way the feta cheese gets so crisp with the egg! It’s no wonder the original recipe went viral on TikTok and Instagram with over 32 million views, and now, thanks to Grace Elkus, we can all enjoy this delicious creation. Have it your way with any toppings or base you desire. Mix it up with a tortilla or sourdough toast, add avocado, but the feta egg remains the same, delicious.

Ingredients in Feta Eggs

  • Feta Cheese – for best results use a feta cheese block packed in brine. This type will melt and crisp up the best. You can use pre-crumbled feta but it just won’t be as creamy or melt as well.
  • Eggs – see tips below for cooking the perfect egg, whether you like runny yolks or fully cooked yolks.
  • Fresh Ground Black Pepper and Red Pepper Flakes – the feta is so salty I don’t recommend adding salt.
  • For Serving – I like to serve these Feta Eggs on sourdough toast with avocado.

Variations and Additions

  • Chili oil
  • Squeeze of lime or lemon juice
  • Sprinkle of tomatoes
  • Chopped onions or red onions
  • Pesto
  • Hot sauce
  • Fresh herbs (such as oregano, dill, or basil)
  • Spinach
  • Chopped mushrooms or other vegetables

How to Cook the Perfect Egg

  • Sunny Side Up: Sunny-side up eggs are the easiest to identify. The egg whites are fully cooked and the bright yellow yolk is resting on top. The yolk stays visible because the egg is never flipped. Break the egg into a greased pan over low heat. Cook until the whites of the egg become opaque and the egg can slide easily around the pan. The original feta egg recipe features a sunny side up egg.
  • Over Easy: Over-easy eggs have a runny yolk, much like a sunny-side-up egg, however, the yolk isn’t as visible. Cook egg according to sunny side up directions over medium heat. Flip and cook for another 20 seconds. Only cook long enough to harden up the egg whites a little more. The yolk should still be completely runny.
  • Over Medium: For over-medium eggs, you simply cook another minute longer than you would cook an over-easy egg. You should be able to tell the doneness by pressing on the outside of the yolk. It should still be somewhat soft and bounce back.
  • Over Hard: Continue cooking the eggs until the yolk cooks through. When you flip the egg, you can press down on the yolk until it breaks or you can puncture it with a fork before or after cooking. Remove from the pan as soon as the yolk is cooked through, no longer. Even though the egg is over-hard, you don’t want it to get rubbery.

How to Serve Feta Eggs

Original way: serve on a small tortilla with avocado and a squeeze of lime. Add any extra toppings.

Original way with a slight twist: instead of avocado, try hummus or refried beans. Add any extra toppings.

On toast: serve the fried feta eggs on a sourdough toast or with a toasted English muffin for a good crunch. Add any extra toppings.

In a bowl: serve over salad, rice, or pasta for an interesting flavor and texture. Add any extra toppings.

Frequently Asked Questions about Feta Eggs

Where does feta cheese come from?

True feta can only be made in Greece. The cheese itself is typically made from goat’s or sheep’s milk, but more modernly, has been made containing cow’s milk. The cheese is not cooked or processed, but cured in a brine that adds the salty flavor you are familiar with.

Do I need to flip egg when frying?

No, these eggs are called ‘sunny side up’. They just take a little longer to cook than an egg that you would flip over.

Is feta the healthiest cheese?

Feta is a reasonable option because, while it is higher in salt, it is lower in fat, which makes it a good option.

Ingredients

  • 1/3 cup feta cheese crumbled from a block, see notes
  • 1 large egg
  • black pepper to taste
  • red pepper flakes to taste
  • sourdough bread for serving
  • avocado for serving

Instructions

  • Heat a non stick skillet, or a skillet sprayed lightly with cooking spray, over medium heat. Place feta on the pan in a ring shape.

  • Allow the feta to cook until it is melty and bubbly.

  • Crack the egg in the middle of the ring of feta.

  • Cook until the white of the egg is cooked through, but the yolk is still runny. The feta should be browning and crisping on the edges, but not burning.

  • Season with pepper and red pepper flakes. Serve on a slice of toasted sourdough bread spread with avocado.
