We love Funfetti Cake Mix Cookies at our house. My husband is particularly fond of anything that starts with the word “funfetti.” I don’t know who at Pillsbury came up with this word, but it’s brilliant! This recipe is a breeze because you can take a simple box of cake mix and turn it into soft, fluffy, moist cookies. The festive colorful sprinkles and the birthday cake taste can turn any day into a celebration. It’s one of my favorite things to make with the kids in the kitchen because they can help with every step.

Ingredients in Funfetti Cake Mix Cookies

It’s a win any day I can make cookies with 3 ingredients. There is a 4th optional ingredient, rainbow sprinkles, if you want to add an extra touch of color to the top of the cookies.

  • Funfetti Cake Mix – Pillsbury has the official trademark for the word “Funfetti” Cake mix, however, you can use any rainbow sprinkle cake mix to make these funfetti cookies. You don’t need to add anything to the cake batter other than what we list in this recipe.
  • Vegetable Oil – I like to stir in vegetable oil for these Funfetti Cake Mix cookies, but you can use coconut oil if desired. Either option will give them a soft texture.
  • Eggs – Two large eggs will do the trick for this recipe.
  • Sprinkles (Optional) – I like to use the rainbow jimmies because they keep their shape better and don’t dissolve into the confetti cake mix. Nonpareils tend to do this.

Why Use a Cake Mix?

Admittedly, this is a simple recipe. There are times I love to spend all day in the kitchen testing, chilling, baking (and sampling!) all kinds of cookie recipes from scratch. But there are also days I want warm cookies coming out of the oven without the mess of measuring spoons and a bunch of ingredients. This is especially true when young children are part of the equation. Can anyone relate?

A cake mix basically replaces all of the dry ingredients like flour, salt, and soda. It even replaces the need for adding vanilla extract. The only two ingredients left are oil and eggs. And, the result is still rewarding. These cookies are chewy and taste great!

Recipe Tip

Whenever I make cookies, I like to sprinkle some extra mix-ins on top. Mix-ins tend to sink to the bottom when the cookies bake, so sprinkling them on top brings the presentation up a notch. Whether it is chocolate chips, sprinkles, or nuts, I think it looks much better.

While my kids love these funfetti cookies (they’ll tell you it’s one of their favorite cookie recipes ever!) you can make lots of different cookies with a cake mix:

  • If you don’t have a funfetti cake mix, you can use a white cake mix and add sprinkles.
  • Try double chocolate cake mix cookies with chocolate cake mix and chocolate chips.
  • Another favorite of mine is lemon cake mix cookies with white chocolate chips. So yummy!
  • Make strawberry cake mix cookies with red and white sprinkles for a darling Valentine’s Day treat.

Frequently Asked Questions

Can I make the Funfetti cookie dough ahead of time?

Yes! You can mix up the dough and refrigerate it a day ahead of baking or freeze it for a few weeks.

To refrigerate, wrap the dough tightly in plastic wrap or seal it tightly in a resealable plastic bag.

To freeze, wrap it in plastic wrap and then in aluminum foil before freezing. You can also also wrap it in plastic wrap, then seal it tightly in a resealable freezer bag. This gives the dough extra protection against freezer burn.

Are Funfetti cookies the same as confetti cookies?

Pillsbury trademarked the word Funfetti for their vanilla cake mix and prepared frosting products that contain candy sprinkles. Funfetti cookies are made with this mix. They are essentially the same as confetti cookies, which are vanilla cookies with sprinkles added to the cookie dough.

Is frosting good on Funfetti cookies?

Of course! If you want to frost these cookies, a traditional vanilla buttercream frosting is perfect. We also have a raspberry frosting that adds incredible flavor and a pretty color to these cookies. Top either of these frostings with rainbow sprinkles to match the Funfetti cookies.

Ingredients

  • 15.25 ounce Funfetti cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • sprinkles optional

Instructions

  • In a large mixing bowl, combine cake mix, oil, and eggs until a dough forms. Cover and refrigerate for at least 15 minutes.

  • Preheat oven to 350. Roll the dough into 1-inch balls and place them on a baking sheet.

  • Bake for 10 minutes. Do not over-bake! Remove from oven and transfer to a wire rack to cool.
