This gluten free pancake recipe is one of the first things that made me feel like I could still eat delicious food after being told by my doctor that I’m allergic to gluten. I admit, I was a little devastated, as many of my favorite foods have wheat. But after coming to grips with it and doing a little research I realized that although I can’t have wheat, there are still ways to create alternative yummy recipes of the foods that I love. This pancake recipe is the perfect example. These are the best gluten-free pancakes, and I am so happy I didn’t have to give up one of my favorite breakfast foods.

Ingredients in Gluten Free Pancakes

  • Gluten-Free Flour Blend – a good cup for cup flour blend (I like Namaste)
  • Granulated sugar
  • Baking powder
  • Baking soda
  • Salt
  • Milk
  • Egg
  • Optional: Vanilla Extract

Finding Good Gluten Free Flour

The most important step to fluffy gluten-free pancakes is starting with a good GF flour. Not all gluten free flours are created equal! You need to find a good one that says it substitutes cup for cup with regular flour. I had to experiment with a few different ones before finding this one that I really like. Recently I tried the Namaste Perfect Flour Blend Gluten Free Flour, which I found at Costco. It’s delicious and measures exactly like flour. And it gives this pancake recipe that light, fluffy texture that I’ve been craving. If you can’t find Namaste look for a good cup for cup gluten-free flour blend.

Namaste flour is so good in these pancakes, the rest of my family is perfectly satisfied with them even though they can eat regular flour. They can eat stacks of these pancakes without questioning if they are gluten free or not.

Make Your Own Gluten Free Pancake Mix

This easy gluten free pancake recipe can be made into a mix to make life simpler. I usually double or triple the recipe and mix together all the dry ingredients. Leave out the milk and egg! Then when you are ready to make pancakes use 1 ¾ cups of the pancake mix and add the wet ingredients – egg and milk. Best gluten free pancakes ever for fluffy pancakes, way better than any store bought mix.

Add-ins for Gluten Free Pancakes

With one or two extra ingredients, you can give your pancakes a boost of flavor. Try one or combine some of the add-ins below for an extra delicious gluten free pancake.

  • Gluten Free Blueberry Pancakes: Add ½ cup fresh blueberries to the pancake batter.
  • Banana Pancakes: Add ½ cup mashed banana to the pancake batter. Slice 1-2 bananas. When you add the pancake batter to the pan, watch for the bubbles to come on top, then place sliced bananas on top of each pancake.
  • Peanut Butter Pancakes: Add ½ cup creamy peanut butter to the batter.
  • Chocolate Chips: Throw in a few tablespoons of chocolate chips for chocolate chip pancakes.
  • Cinnamon Pancakes: Sprinkle 1-2 teaspoons of cinnamon into the batter. For an extra burst of cinnamon, add a handful of cinnamon chips as well.

Coconut Yogurt Syrup

This coconut syrup is to die for! It tastes just like the coconut syrups that they serve at diners in Hawaii. I could eat it with a spoon, it’s that yummy. Plus, it’s super easy to make and tastes amazing with this pancake recipe. Of course, there are dozens of syrups and toppings you can try, but this is one of my favorites to share with you. Here’s all you need:

  • Sugar
  • Coconut Greek Yogurt – you could use regular coconut yogurt too, but the Greek variety gives it more bulk and flavor.
  • Butter
  • Coconut extract

Melt all the ingredients together and whisk over low heat until they’re all combined and smooth. It’s delicious on waffles, toast, homemade rolls, just about anything!

What alternative flour is best for pancakes?

I prefer Namaste Gluten-Free Flour. The blend includes Oraganic Sweet Brown Rice Flour, Organic Tapioca Starch, Organic Brown Rice Flour, Organic Arrowroot Powder, Organic Sorghum Flour, and Xanthan Gum. Some other variations of flour blends contain oats, almond flour, coconut flour, potato starch, tapioca flour. I know Bob’s Red Mill Gluten Free flour is another popular one.

What do gluten free pancakes taste like?

I think this recipe tastes just like regular pancakes, but maybe even a little better!

Can this be made dairy-free?

Of course! Just sub out the milk for your favorite milk alternative like almond milk, coconut milk, or oat milk. Then use a vegan butter if you like butter on your pancakes.

Can this be made egg-free?

Yes, just use an egg replacer. There are brands that you can buy but some people just replace the egg with mashed banana or applesauce.

How do I store leftovers?

Keep any leftover batter or pancakes in an airtight container in the refrigerator.

Ingredients

Gluten Free Pancakes Batter:

  • 1 1/4 cups gluten free flour blend (I like Namaste)
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1 large egg

Coconut Syrup (optional)

  • 1 1/2 cups sugar
  • 5 ounces Greek yogurt, coconut flavored (1 small container)
  • 1/2 cup butter
  • 1/2 teaspoon coconut extract

Additional Toppings (optional)

  • coconut flakes
  • fresh blackberries, blueberries, or raspberries

Instructions

For the Gluten Free Pancakes:

  • Mix all the dry ingredients in a medium sized bowl.

  • Then stir in the milk and egg. If you are adding fresh berries, gently stir them in now.

  • Line a griddle or skillet, over a medium-low heat, with some cooking spray. Fill a ½ cup measuring cup with the pancake batter, and then pour it on the hot griddle. Cook until golden brown and the first side, then flip and repeat.

  • Serve with hot syrup and fresh berries.

For the Coconut Syrup (optional):

  • Add the sugar, yogurt, and butter to a small saucepan over low heat. When the sugar has dissolved, turn the heat up to medium high and bring to a boil.

  • Remove from heat and stir in the coconut extract.

To serve:

  • Top pancakes with the coconut syrup, fresh berries, and coconut flakes.

    Last fall, we found out three of us in my family have celiac disease. It’s been quite the change and learning curve. The hardest part is watching my 9 year old never get to eat any of the school bday treats. I would never wish it on anyone and I’m so sorry you can’t have it anymore either. But I do want to tell you that I am a huge fan of your recipes… I tell all my friends about your site. And I’m so excited that I will be able to start finding even more delicious recipes here now that you are posting GF ones. I feel so bad even saying that because it sounds so heartless, like your loss is my gain. And I don’t mean it that way at all!! I just want you to know you’re awesome and there are many of us who are so excited for GF recipes we know will be good because they come from you!!

It’s a whole new adventure. I want to be able to figure out some really good tasting content that I will have as a resource for myself too.
