This Chewy Oatmeal Chocolate Chip Cookie recipe is definitely the most made cookies in our house! They are so chewy and yummy! When I was in high school, we used to eat a lot of our lunches at closest friends homes. My friend’s mom would make the best food for us but it was always a special treat when we would get these oatmeal cookies.
After years of enjoying these chewy oatmeal chocolate chip cookies, the family was kind enough to share the recipe with me. Now, this recipe is a favorite in our family. It’s fun to see my own family enjoy my favorite childhood desserts. My husband makes these all the time, and I’m proud to say he pretty much has perfected it!
Chewy Oatmeal Cookies
Have you ever noticed that people can get pretty passionate about their cookies? People either want their cookies soft and chewy or thin and crispy. However, I’m convinced that this is the cookie that could bring everyone together!
These chewy oatmeal chocolate chip cookies are, well, chewy. There is no denying that they are soft and practically melt in your mouth. But, crispy cookie lovers will also love this cookie, thanks to the crispy exterior that gives just a slight crunch when you bite through. Try it and see! You will love it!
What Kind of Oatmeal to Use
There are so many different types and varieties of oatmeal out there! For this recipe, you will want to use a combination of flavorless quick oats along with a bit of flour to help hold the cookie together. You can use old-fashioned oats instead if that is what you have on hand, just be warned that it makes the cookie even softer.
If you want a chewy oatmeal chocolate chip cookie without a crunch on the outer layer, this could be a good option. You can even give the oats a quick blitz in the blender to give them a finer texture.
Ingredients in Chewy Oatmeal Cookies
Don’t let this list of ingredients intimidate you! These are all pantry staple ingreidnets that are simple to grab and have on hand. Mix them together for a delicious and chewy oatmeal chocolate chip cookie!
- Shortening – This type of fat will increase the chewy texture of the cookies. It is usually at room temperature. This is in replace of unsalted butter.
- Brown sugar – Sweetens and softens the cookies while adding moisture to the cookie dough. We used light brown sugar but if you like the dark brown sugar flavor that is great too!
- Egg – This will bind the cookie dough together. Have the eggs at room temp for the best baking.
- Vanilla extract – Adds a hint of flavor!
- Milk – Another flavor enhancer that gives the chewy oatmeal cookies a tender touch!
- Quick oats – Old-fashioned rolled oats are the main ingredient. These quick oats give extra texture and thickness to the cookies.
- Flour – All-purpose flour or a gluten-free flour mixture if you want to make them GF adds a thickness and base to the cookies.
- Baking soda – Helps lift and raise the cookies while baking as well as becomes lighter and airy in the middle.
- Salt – Enhances the flavor of the oatmeal chocolate chip cookies.
- Cinnamon – A special touch of flavor to these cookies.
- Chocolate chips – Gives the cookies that chocolate sweetness.

Optional Cookie Add-Ins
One of the best parts of making these chewy oatmeal chocolate chip cookies is all the goodies you can add in. This recipe is fantastic as is, but if you want to change it up a bit, or try mixing a new flavor in, try adding some of these or subbing out the chocolate chips for these options!
- Chocolate – Try milk chocolate chips, or dark chocolate chunks for a variety of flavors.
- Chips – Peanut butter chips and butterscotch chips add that extra peanut flavor.
- Fruit – Dried fruit gives a squishy and soft texture. Try craisins, cranberries, raisins, dates, or apricot pieces. This is a sweet and chewy add-in! Oatmeal raisin cookies are always our favorite!
- Coconut – Toast your coconut ahead of time to have a tropical twist to the cookies.
- Nuts – Chopped nuts are always a great idea to incorporate into cookies. Try almonds, pecans, or walnuts for an extra crunch.
- Spices – We love the cinnamon added to the ingredients! Try it with nutmeg or cloves for a warm cookie.
Tips for Making Oatmeal Chocolate Chip Cookies
Try these simple and helpful tips next time you make these oatmeal chocoalte chip cookies. Enrich the flavor, make them extra chewy, and learn just the right way to bake them in the oven. These tips are easy to add in while making them!
- More brown sugar – Using more brown sugar helps give these oatmeal chocolate chip cookies that extra moisture, flavor, and chewiness.
- Egg yolk – Enhance the richness and tenderness of the cookies with an egg yolk added to the wet ingredients.
- Don’t overmix – Once the wet and dry ingredients are well combined, it is best to leave the dough to rest. Over-mixing the dough can make tough cookies.
- Chill – Place the dough in the refrigerator for an hour. This will combine the dough and prevent the dough from spreading while baking.
- Baking – When baking the cookies, I like to use silicone baking mats on the baking sheets. These help distribute the warmth as well as help the cookies slide right off onto a spatula.
- Underbake – It is always best to underbake cookies. Allow the cookies to finish baking on the baking sheet for one to two minutes. This gives them time to set up before letting them cool on the cooling rack.

Frequently Asked Questions
Putting your cookie dough in the fridge to chill can help to make your cookies chewy, but the most important thing is to make sure you don’t overbake your cookies.
After baking your cookies make sure to let them sit at room temperature to cool for a bit, using a wire rack or mat to let them sit. After they cool you can put them in an airtight container to store them for later and keep the fresh taste.
The easiest method is to use a stand mixer with a paddle attachment, or with a handheld electric mixer in a large bowl.
It is best to only use old fasihoned oats. Quick oats are not as hearty and don’t have a chewy texture compared to old fashioned oats.
I like to use a cookie scoop to help me evenly measure out cookie dough balls. You can either drop the cookie right on the baking sheet or roll them into a ball. You can also use a spoon to help distribute the cookie dough too.
Yes! There are a few options to substitute eggs with. Try applesauce, mashed bananas, or yogurt. All of them are healthy and add even more to the cookies.
Storing Oatmeal Chocolate Chip Cookies
Storing chewy oatmeal chocolate chip cookies is so simple and last long with a secret slice of bread! Either save them in at room temperature or add them to your freezer. Oatmeal chocolate chip cookies are delicious year round!
- Container – Store your baked oatmeal chocolate chip cookies in an airtight container for one week. If you would like to stack them, it is best to use parchment paper in between the layers.
- Bread – To keep the cookies fresh longer, add a slice of bread to the container.
- Freezer – These cookies are great to make in batches and store in the freezer. Freeze them first on a baking sheet in the freezer for thirty minutes. Once frozen, place the frozen cookies in an airtight container. This will help prevent the cookies from sticking to each other.

Hi
How much of the extras can you add into the dough without changing the texture of the cookies.
I just made these tonight. Thanks! I subbed butter for 1/2 cup of the shortening and I used whole wheat flour and added chocolate chips. So good! They fell apart a little because of the butter, but they were still delicious!
Lovely cookies, looks crunchy, shall give it a try…
