Starbucks method of making egg bites is to cook them sous vide. Sous vide is when you cook something by vacuuming-sealing it and then placing it in warm water to slowly cook. This creates an evenly cooked egg and makes sure nothing gets overcooked. Because this technique requires a sous vide machine, we bake our egg bites. They taste great! However, if you want to achieve a texture close to the sous vide eggs, you can put a pan of boiling water in the oven at the same time as the egg bites are baking.
Helpful Tips
- If the egg bites aren’t coming out of the muffin tin, slide a plastic spoon around the edges to release the sides.
- If you want to make your egg bites a little bit more like the Starbucks ones you can add a pan of boiling water to the bottom rack of the oven while the egg bites are baking.
- Store leftovers in the fridge and heat up in the microwave.

Ingredients
- 9 large eggs
- 1 cup cottage cheese
- 1 ¼ cup shredded Gruyere cheese
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon smoked paprika
- ½ cup finely chopped cooked bacon, about 6 slices of bacon
Instructions
- Heat oven to 350 degrees F. Spray an 18-count muffin pan generously with nonstick cooking spray, or use muffin liners. Set aside.
- Place eggs and cottage cheese in a blender and blend until smooth. Pour into a bowl and fold in cheese, salt, pepper, and paprika.
- Fill each muffin cup about two-thirds full (just under ¼ cup egg mixture). Top each egg bite with a rounded teaspoon of bacon. Gently press bacon into the egg mixture.
- Bake 20-22 minutes, or until eggs are set. Remove and let sit for 5 minutes.
