- 1 recipe beef birria (click link)
- 1 egg
- 1-2 packages beef ramen noodles
- 1/4 cup chopped onion
- 1 tablespoon cilantro
- 1/2 lime
Make the beef birria according to recipe.
For the soft boiled egg, fill a medium pot with water and heat to a simmer. Place the egg into the water and let simmer for 6 minutes. Remove the egg from the water with a slotted spoon and place in an ice water bath for 3 minutes. Peel and set aside.
Separate the beef birria from the birria broth, cover with foil and set aside. Take the broth and bring it to a boil in a medium saucepan. If more broth is needed, add more water and the seasoning packets that came with the ramen if needed for flavor. Cook the ramen in the broth over medium-high heat for the amount of time suggested on the package instructions. Place the ramen noodles in a bowl and pour some of the excess over the top.Top the ramen with shredded beef birria, soft boiled egg, chopped onion, and cilantro. Garnish with limes.
