- 1 pineapple
- 1 cup semi sweet chocolate chips
- 1 tablespoon coconut oil
- toppings optional
Cut pineapple into quarters. Set on a paper towel and pat dry.
In a microwave safe bowl, microwave the chocolate chips and coconut oil together in 30 second increments until fully melted. Stir well between each increment.
Line a baking sheet with parchment paper. Dip each pineapple quarter in chocolate and shake off any excess chocolate. Set the pineapple down on the parchment paper. If adding toppings, add when the chocolate is still wet.
Place in the fridge and let cool until the chocolate is fully set. Enjoy!
- I love to sprinkle toasted coconut onto my chocolate covered pineapple.
- To toast your own coconut, place shredded sweetened coconut flakes on a baking sheet. Bake at 350 for about 8 minutes, or until the coconut turns golden brown.
- These are best served immediately after setting, but store any leftovers in the fridge.
