Ingredients

  • 30 ounce chickpeas rinsed and drained
  • 3 celery stalks diced
  • 1 shallot minced
  • 2 tablespoons capers
  • 0.5 ounces fresh dill
  • zest and juice of one lemon
  • 1/4 cup mayonnaise
  • 1 teaspoon dijon mustard
  • pinch of salt and pepper
  • lettuce cups for serving

Instructions

  • Place the chickpeas in a large bowl. Lightly mash them with a fork.
