- 1 large onion
- 6 ½ cups water
- 1 teaspoon salt
- 4 chicken breasts boneless, skinless
- 1 cup carrots thinly sliced
- ½ cup celery finely diced
- 2 Tablespoons chicken bouillon granules
- 8 ounces egg noodles
Peel onion and chop into chunks. Combine ½ cup of water and onion in a food processor or blender. Puree for 30 seconds.
In a large crock pot combine all the ingredients except noodles.
Cook on HIGH for 3 to 4 hours, or until the chicken is fully cooked. Remove the chicken and shred it with two forks. Cook the noodles according to the package directions.
Add the shredded chicken and cooked noodles back to the crock pot. Stir and serve. If you need to add more liquid to the soup, add a can of Swanson's chicken broth or water and season with more of the chicken bouillon granules to taste.
