- 1/3 cup feta cheese crumbled from a block, see notes
- 1 large egg
- black pepper to taste
- red pepper flakes to taste
- sourdough bread for serving
- avocado for serving
Heat a non stick skillet, or a skillet sprayed lightly with cooking spray, over medium heat. Place feta on the pan in a ring shape.
Allow the feta to cook until it is melty and bubbly.
Crack the egg in the middle of the ring of feta.
Cook until the white of the egg is cooked through, but the yolk is still runny. The feta should be browning and crisping on the edges, but not burning.
Season with pepper and red pepper flakes. Serve on a slice of toasted sourdough bread spread with avocado.

- Top with chili oil or sriracha for extra heat.
- For best results, use feta from a block packed in brine. This will be the most creamy, melty type of feta. Pre-crumbled feta may not melt as well.
