Italian Turkey Sandwich
They make this Turkey Over Italy Sandwich at my favorite deli in Boise called Deli George. It has turkey, provolone, and pesto mayo on focaccia bread.

- 1 loaf focaccia bread, cut into 8 wedges (like a pie)
- 1 pound smoked deli turkey get some good stuff, I like to get mine sliced thin fresh from the deli
- 8 slices provolone cheese
- ½ cup sliced pepperoncini
- 1 ½ cups shredded lettuce
- red wine vinegar to taste
- oregano to taste
Pesto Mayo
- 1 cup mayonnaise
- ½ cup pesto
Mix together the mayonnaise and pesto in a small bowl. Set aside.
Toss shredded lettuce with red wine vinegar and a pinch of oregano. Set aside. Cut open the focaccia bread wedges.
Layer each slice with the pesto mayo.
Layer each sandwich with turkey, provolone cheese, sliced pepperoncini, and shredded lettuce.
Top with the other slice of focaccia bread.
This sandwich is perfect as is, but if you are looking to add more or don't have some of these ingredients on hand, try some other toppings.
