Salad
- 6 cups chopped romaine lettuce
- 2 cups baby arugula
- 2 cups sliced grilled chicken
- ⅓ small red onion, thinly sliced
- 1 cup pecan halves
- 1 ¾ cup dehydrated apple slices (crispy, not soft)
- ¾ cup crumbled Gorgonzola cheese
- 2 Roma tomatoes
Dressing
- ½ cup olive oil
- ¼ cup white wine vinegar
- ½ cup honey
- 3 tablespoons 100% apple juice (not from concentrate)
- ½ teaspoon salt
- ⅓ teaspoon onion powder
- ¼ teaspoon garlic powder
Place salad dressing ingredients in a blender. Blend for 30 seconds.
Pour into a glass jar and refrigerate for at least 30 minutes.
Assemble all salad ingredients in a large bowl.
Pour dressing over the salad and toss or serve on the side.
- Make the dressing up to 3 days ahead of time for a quick lunch.
- To take the edge off the taste of the red onions, soak them in cold water for 10 minutes.
- Salad's don't keep well in the fridge, so try to eat leftovers by the next day.
