Ingredients

  • 1/2 tablespoon butter (or to taste)
  • 2 tortillas (soft taco size)
  • 1 cup shredded mozzarella cheese
  • 1/3 cup pepperoni (or to taste)
  • 1/3 cup pizza sauce (for dipping)

Instructions

  • Heat griddle to 325℉. If making over a stovetop, heat a non-stick pan to medium heat. Melt the butter over the griddle and spread it around with a spatula.
Place one tortilla on the griddle and top with 1/2 cup cheese.
  • Add pepperoni and then another 1/2 cup cheese.
  • Top with remaining tortilla and allow to cook 3-4 minutes or until the bottom tortilla is golden brown.
  • Flip the quesadilla and cook another 3-4 minutes or until cheese is melted and the tortilla is golden brown.
  • Slice into quarters, making pizza "slices" and serve hot with pizza sauce on the side.
