Summer Peach Crisp

Topping
- 1 cup butter cold
- 1 cup brown sugar
- 1 cup flour
- 1 cup oatmeal
- ¼ teaspoon baking powder
- vanilla ice cream
Filling
- 8 cup peaches peeled and sliced (or canned unsweetened peach slices)
- 1 cup sugar
- ½ cup flour
- ½ teaspoon cinnamon
- 2 Tablespoon lemon juice
Preheat oven to 350-degrees. In a large bowl, mix butter, brown sugar, flour, oatmeal and baking powder just until the butter is broken up and ingredients are mixed.
Mixture should be crumbly. Set aside.
In a separate large bowl, gently combine peaches, sugar, flour, cinnamon and lemon juice.
Transfer peach mixture to a 9x13 inch dish.
Crumble crisp topping on top.
Bake for 35-45 minutes or until golden brown.
Serve warm with a scoop of vanilla ice cream. Enjoy!

Single Serve Ramekin Summer Peach Crisp:
- 1 Peach Sliced sliced (or 6-8 canned unsweetened peach slices)
- 2 Tbsp. raisins, craisins, or other dried fruit
- 1 Tbsp sugar
- 1/4 tsp cinnamon
- 1/4 tsp almond extract
- 1/2 Tbsp flour
- 1/4 c granola (any flavor)
Directions:
Preheat oven to 350-degrees. Toss peaches,fruit medley, sugar, cinnamon, almond extract and flour together in a small bowl. Transfer to a small ramekin, souffle dish or other small/individual-sized oven-safe dish. Sprinkle on granola and bake for 10-15 minutes or until granola turns golden-brown. Top with a scoop of vanilla ice cream and serve!
