  • We used chicken in this recipe, but it would also go really well with shrimp if your family likes seafood. Just add 1 pound of uncooked, deveined shrimp instead of the chicken.
  • If you are looking for a vegetarian version of Chicken Artichoke Pasta, then replace the chicken with mushrooms.
  • You can also use whole-wheat or gluten free noodles.

Ingredients

  • 4 tablespoons olive oil
  • 1/3 cup green onions chopped
  • 1 tablespoon garlic chopped
  • 1 pound boneless skinless chicken breast cut into bite size pieces
  • 1 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup water
  • 14 ounces artichoke hearts drained
  • 1 cup heavy cream
  • 1 1/2 teaspoons butter
  • 10-12 ounces penne pasta cooked
  • 3/4 cup fresh grated parmesan cheese

Instructions

  • Heat olive oil, onions, and garlic in a large skillet. Add chicken, salt, and red pepper flakes. Cook until chicken is cooked through.

  • Add water and scrape the bottom of the skillet. Add artichoke hearts and heavy cream.

  • Let reduce (cook 7 minutes until half as thick).

  • Remove from heat and stir in butter and parmesan cheese. Add pasta.

    I used canned chicken and a can of artichokes I found in the pantry. Added some mushrooms and cappers I had leftover in the fridge and some extra cracked black pepper on top. Was really good to use up what we had on hand for a quick lunch. Will make again!

    This was delicious! I used marinated artichokes and added a little more parmesan because I freshly grated it with my micro plane which makes less volume! Wonderful recipe. Next time I will use two jars of artichokes.

  3. I have made this so many times and it is still a crowd pleaser!! I add bacon, mushrooms and spinach to mine. Sometimes I add bell pepper and grape tomatoes as well! The recipe doesn’t need it but it is a great way to get some veggies in!

  5. I’m anxious to make this, since it’s easy, quick, & it definitely sounds delicious. I might throw in some sliced mushrooms, or perhaps a bit of some other leftover veggies (usually spinach) which is hanging around in the fridge. I’m lucky, since all of my 4 little ones love veggies (believe it or not). As always, I’ll use whole grain pasta. Thanks for this lovely recipe. 🙂
