The Best Bread Machine Bread Recipe

My good friend Abby makes THE BEST bread. A few years ago I convinced her to let me in on her secret, and to my surprise, she simply stated that the secret is that she uses her bread machine. Seriously!? I honestly didn’t believe her at first, because bread machine bread just isn’t usually good (compared to the classic, manual-rising, oven-baked variety)! I’ve attempted making bread in a bread machine at least a dozen times and it always came out dry and hard, and just not quite right. Well, she proved me wrong. Now making bread/dough in the bread machine is my VERY favorite way to make homemade bread. Trust me, you are going to love how easy and delicious this recipe is!

The Secret to Bread Maker Bread

Bread machines are SO convenient. You just put everything right in, push go, and they do all the work for you! The mixing, the kneading, the rising, the baking – everything! Where a bread machine falls short is in the “baking” part. When it comes to baking bread, the bread machine is not your friend. So what is to be done? Shhh.. I’m going to let you in on the secret. Here’s what you do: Let the bread machine do all the mixing, kneading, and rising. Then dump the dough in a bread pan, put it in a COLD oven (no preheating, YAY!), turn the oven on and bake. It’s THAT easy. Just these few little steps make a world of difference!

How to Make Bread using a Bread Machine (Step by Step)

  1. First, place 1 cup VERY hot water, 1 egg, 4 tablespoons cold butter, ¼ cup sugar, and 1 ¼ teaspoons salt in the bread machine. No need to mix or anything, just put it all straight in.
  2. Next, Add 3 cups flour directly to the bread maker. Make a small well in the flour with your hand and add yeast to the well.
  3. Set bread machine to “dough” for 90 minutes (it should default to 1 hour 30 minutes) and press “start”.
  4. When your dough is finished, pour it straight into a greased bread pan. If you want to make it look pretty, you can turn it so a smooth side is facing up. Then just tuck down any unruly edges.
  5. Place the bread pan in the COLD oven. No preheating necessary!
  6. Set temperature to 350-degrees and set timer for 30 minutes. The bread will rise and bake in this time.
  7. Remove baked bread from the oven and remove quickly from pan. Place on a cooling rack and brush with butter. Cover with a towel or place in a plastic Ziplock bag to keep from drying out.

What Bread Maker is Best?

Honestly, it doesn’t really matter what kind of bread machine you have. We got the cheapest bread maker on Amazon that had decent reviews. I think it was under $100. Any basic bread maker will do the trick. Just make sure it has a “dough” option so it will stop once the dough is done.

Will regular flour work in a bread machine?

Bread machines usually call for ‘bread flour’. The main difference between bread flour and all-purpose flour is the gluten content (bread flour has more gluten). All-purpose flour is absolutely fine to use! Your loaf of bread may not rise as spectacularly as it would with the bread flour, but there really isn’t much of a difference.

Is it cheaper to make your own bread with a bread maker?

YES! Not only is it cheaper, but you know exactly what is going into it! No mystery ingredients in your sandwich bread.

Broken down, the savings look like this: The average cost of a loaf of basic white bread is around $4 (more or less), making it yourself costs about $1.
(It also tastes better!)

Do I need to use special bread maker yeast?

Nope! Just make sure you are using a quick-rise yeast for it to work best. In this recipe, we just use all-purpose flour. No need to spend extra getting special ingredients.

Ingredients

  • 1 cup water (very hot)
  • 1 egg
  • 4 tablespoons butter (cold- not softened)
  • 1/4 cup sugar
  • 1 1/4 teaspoons salt
  • 3 cups flour
  • 1 tablespoon quick-rise yeast

Instructions

  • Place hot water, egg, butter, sugar, and salt in bread machine.
    Bread machine with water, butter, sugar, salt, and egg.
  • Add 3 cups flour. Make a small well in the flour and add yeast.

  • Set bread machine to "dough" for 90 minutes (1 hour 30 minutes) and start.

  • When dough is finished. Pour directly into a greased bread pan. If needed, gently turn the bread or tuck in the edges so the top is smooth (it's ok if it is sticky).

If Making Rolls:

  • Remove dough from bread machine and place on a floured surface.
  • Knead in a little flour if dough is too sticky to handle.
  • Divide dough into 12 equal pieces. Fold and pinch into dough balls and place in a greased 9×13 glass baking dish.
  • Place in a COLD oven and set to 350 degrees. Set timer for 25 minutes.
  • Remove rolls from oven and brush with butter.

    This is a follow up review because the recipe is fantastic, and I’ve learned that the dough is good for a variety of things. It can be used to make wonderful cinnamon rolls, hamburger buns, and dinner rolls. The leftover bread (if there is any) can be frozen and used later as bread crumbs. I chopped some up last week, mixed it with melted butter, and toasted it as a topping for homemade mac and cheese. Wow! I’m not a gifted cook, just a functional one, so I really appreciate simple recipes that yield stellar results. This recipe does that in spades.

  2. Absolutely obsessed with this bread. Tried it as rolls for the first time tonight. I want to do them for Thanksgiving, but there is so little time for everything. Is it possible to make the dough the day before? Or, at least, hours before? Thank you! Lori

    1. If you want to make them a day ahead I would refrigerate the dough right away so you don’t get a second rise yet. Day of, I would take it out of the fridge, portion and shape them, and allow to rise a bit before baking. The dough will be cold when you take it out of the fridge so you will definitely want to let them rise before even putting them in a cold oven. Hope this makes sense!

    I’m not usually the one to take the time to review recipes but I just had to give it a 5 stars! Ive made many bread recipes but this one is so simple… I threw the ingredients in the way it is called for except I went by a review I saw saying to cut the water to 3/4 and that worked very well. I let my machine do the dough cycle then since it’s kind of a small amount of dough I used a 4 well mini loaf pan …and it filled them nicely..baked on 350 for 15 minutes or so after letting the dough rest for 30 minutes in closed microwave. The crumb is lovely..think nature’s own butter bread soft… I’ve never found one to do that and I guess simplicity is the answer. thank you!!

    1. Yes, we have found this is the best method! The bread machine does all the rising and kneading prep, but you just can’t beat baking it in the oven!

    I absolutely love this bread and have posted so before. I want to add a couple of hints you may want to try that work really well for me. 1, Use 3 /4 cup water. Dough is easier to handle. 2. Do you know if you wait 15 to 30 minutes to put your baked goods (no matter what they are) in the oven.
    For this bread I wait 30 minutes. I didn’t think to try it with this recipe until a couple of weeks age. It raises higher and the texture is awesome. Try it!!!

    I am never buying bread again. This is so much better and extremely easy to make. I took a warm loaf over to my parents, and my mom is going to dig out her old bread maker so she can start making it. Used regular yeast because I had no quick rise yeast, and it worked just fine. Followed rest of the recipe as written. I am grateful to have found this recipe. Thank you for it.

    It’s the best bread recipe, I’ve used so far, I first time making didn’t have bread flour, looked for substitute ingredient ( vital wheat gluten) to make bread flour, didn’t have that looked farther to find substitute for vital wheat gluten., I had several of those to choose from. Used it,
    Still with using psyllium husk, and water. The first bread was heavier, tasting, still just looked like wheat bread, taste was good! .
    Dinner rolls were amazing.
    I took 1 bread dough, split into 2 bread pans. Didn’t have another bread pan. Still wonderful. And was able to share double !
    Can this be frozen? To make ahead.?has anyone tried?

  9. It was a little bit doughy when I took it out of the oven and cut a piece off. Putting it back in for a little longer.

      Doesn’t seem to have enough flour in the recipe. The dough is very loose and sticky. I couldn’t even get it out of the machine pan without adding major amounts of flour… about 1/2 cup. Of course then it didn’t rise at all after that so it’s a flop. I’ve used several recipes so I don’t know what the problem is.

      The first time didn’t turn out very well. The dough was very wet and sticky. I tried again but added about 1/2 cup of flour with great success. It’s probably the best homemade bread I’ve made.

    We love this recipe. The first three times we made it, it worked perfectly. Since then, it seems to be rising too quickly and over proofing in the bread machine (and seems too sticky). We can’t figure out what’s going on, though we’ve tried taking it out before 90 minutes and adding extra flour so it’s less sticky. Any thoughts?

      1. It’s been an unusually wet winter, but I don’t think the weather’s really changed since I started baking the bread. Our bread machine dough cycle is about 2.5 hours, but I’ve been taking it out after 90 minutes (sometimes less to try to stop it from rising too much). I’ll try to reduce the water a bit and see what happens. It’s been delicious every time, even when it doesn’t seem quite right.

    i found this recipe in January. I have made minimum 10 loaves. My husband and I LOVE this recipe! i have given loves to friends and family and they have enjoyed it as well. i have made the bread as directed and made a mixture of butter, cinnamon, and brown sugar, pressed the bread out and spread the combination and rolled the bread and baked according to directions. YUMMY!!!

    I’ve been making this bread quite a while and I really love it! It’s so fast and easy
    to make and turns out great. To make it even faster and easier I put together several packets of pre-measured dry ingredients (except the yeast), and place the salt and sugar in a separate little bag which I then place in a larger bag with the 3 cups of flour. I even
    cut up the 4 tablespoons of butter and keep it in a baggy in the fridge. Talk about fast!

    Best bread maker recipe I have found! This is my go-to recipe for baking bread. The crumb is perfect and allows you to thin slice for sandwiches. Make according to recipe and you can’t go wrong. I scrape down the flour during the first couple minutes. Dough will seem very sticky and wet but that’s ok. Don’t add anything! I love that you can pop it into a cold oven and it bakes perfectly. Looking forward to using this recipe for rolls for Thanksgiving.

    I make this bread twice a week now. I add 1/3 whole wheat flour to my three cup mix. I also add a heaping tablespoon of gluten flour to help it rise better with the whole wheat. I let my incredible Breville machine do all the work. I end up with a 3 lb loaf . My my machine allows for three different size loaves and I set it for the 2 lb but always end up with three. The loaves come up to the top of the window and are perfect in every way! Thank you so much for this great recipe that I will use forevermore. I’m planning to try rolls, cinnamon rolls, Pizza and anything else I can think of with this basic recipe. I’ll let you know.

    Help please !
    I followed your recipe as shown but the dough did not form. I added 6 more spoonfuls of baking bread mix and it just stayed like a thick pudding.
    What a waste.
    I am getting so frustrated as this is my third unsuccessful attempt

    So far, my favorite bread recipe. I made it exactly as directed and it turned out perfect. Very soft but dense at the same time. Will be making again and I’m going to make it into buns too. Wondering how this recipe does after freezing?

      I have made this recipe twice with milk and and it turned out great both times. The second time, I used a little less sugar, salt, and yeast to satisfy my personal taste. You may know that substituting milk gives breads a softer crust. It may not rise quite as high as with water, but it will still have decent oven spring (if not over proofed in the machine – use the “poke test”) and a soft interior with no large holes. It will also brown more quickly. Keep an eye on it near the end.

    Wow, my bread turned out amazing!! I had to alter recipe a little since I’m at a high altitude…3 extra tbsps H2O, 25% less yeast, and increased temp to 375…turned out just perfect!!     So tried this 3 different ways and all turned out good

    First followed recipe exactly and baked in the oven.

    Next followed recipe exactly but cooked it in the bread maker entirely ( was good but think I preferred the suggested way though)

    Next again followed recipe but added 2 tablespoons of everything bagel seasoning half to the liquid and half to the flour as I wasnt sure which tonadd it to (cut the salt back slightly as its in the everything mix…and cooked entirely in the bread maker…Husband and I both thought it elevated the bread even more…think I will try adding a bit more next go round (it was an experiment lol)

    I cannot get over not having to let the dough rise a second time; ie: remove dough from machine, knock down and let rise again. Have I missed something, or do I take the dough from the machine, straight into bread pan and then into the oven? Thank you, from London, England.

    Amazing recipe! I substituted bread flour and let the machine do everything with the basic, full program adding a tiny bit extra flour during the first kneading cycle. The bread texture, smell, color and everything was picture perfect. So soft, fragrant and beautifully plump and delicious. Love that this is just 3 cups of flour too! Thank you!

  31. I followed the directions exactly and my bread is not very sturdy. It’s really falling apart even with thick slices. Anybody have any suggestions on what I might have done wrong? I used APV and quick rise yeast

  32. This is a great recipe.. however, if you have a split oven like I do, the bread will burn during the heat up process. The first time I thought it was just a fluke because I was on the middle rack. I just tried again on the low rack and it still burned. I think this might be best for larger normal sized ovens. We have an LG Signature oven. It’s still edible, but the top is black at parts.

    Best I’ve followed so far. Used APF looking forward to repeating with bread flour to compare. Would like to figure out how to get the exterior and shape slight more uniform . Trying to replicate mass produced shape with this tremendously better overall taste.

  34. I am trying this recipe for the first time today and I followed these instructions exactly and the dough was to wet so I had to add extra flour and I am praying I did not add to much. I used 3 cups of all purpose flour. Has anyone else had this issue?

      Yes. I just reduced the water to about 3/4 cup- maybe a tad over. If it’s too dry just add a little water. I really do love this recipe. I commented on it back in November. Still love it!
      I haven’t tried making rolls yet, but I will.

    I made this in my bread maker and it turned out great! I don’t bake it in the oven though. I put it to the white bread setting and 3 1/2 hours later I got the perfect loaf. It’s ridiculously fluffy, soft, and moist. I’m gonna print this recipe for my mom to try next!

  44. Are there adjustments to be made for bread machine baking on the account of elevation and humidity within the house? My question stems from 3 failures from too dry to too wet when following recipes and pre-sets on machine. I’m at 7000’ and house humidity is usually always under 30% (often around 5%)… Any help with this would be greatly appreciated as wasting materials is quite undesirable!

    1. Yes. You would need a really good cup for cup flour blend. I like the Namaste GF Flour brand that you can find at Costco.

    This is, without question, the best bread machine recipe I have ever tried. No kneading, cold butter, put the dough in a cold oven? It just ran counter to every other recipe I’ve tried.     Best bread recipe by far! Did find the dough a little sticky when checking it, so I added a tablespoon at a time of flour until it was as sticky. I also used bread flour & I don’t know if that would have anything to with the stickiness. Was very leery of proofing the bread that way, but wow, I was pleasantly surprised!

    This bread turned out delicious!!!! Perfect taste, beautiful crust and so easy using the bread machine for the dough. Only had active dry so used 1/4 more yeast and activated it fully before adding all ingredients. Made french toast with it the next day and it was perfect!

    So glad I found this recipe. My bread maker died a few weeks ago. It was a Toast Master that I had for over 25 years. It made the most amazing bread. So, I got a new machine by Cuisnart. I used the same recipe and was very disappointed. The taste was very different and the crust was much darker even on the light setting and very hard. I like a light and soft crust. And, I loved the taste that my old machine made. Your recipe is very close to it. I am so glad I found your recipe. Baking it in the oven was wonderful. I have made my old recipe for many people as gifts. Now I am looking at buying a pan from William Sonoma to make perfect rectangle bread loaves for sandwiches. Thank you.

  55. Yesterday, I had a serious yen for fresh hot rolls. So, I made this dough in my Amazon Basic 2 pound bread machine. But literally just as it was done, our power went off for a few hours, so no oven was available and I had to refrigerate it overnight. It continued to rise even in the refrigerator. What would be the best method for making rolls from this refrigerated dough? Should I let it set out until it becomes room temperature again before shaping and placing the rolls? Should I preheat the oven instead of baking in a cold one? thanks for any advice.

    1. I think you could shape them right out of the fridge and then let them rise to room temp. Sorry your power went out! Hope everything is okay!

    So glad I found this recipe site! Today I tried the bread machine and then the oven and it came out perfectly! The only change I made was to use bread flour, which I sifted. I am going to try the rolls next…excited to have bread in half the time it would take by using the bread machine for the whole cycle. Thank you for sharing with your readers.

    My aunt has a bread machine from years ago. She said it was a fad. But when I tried this recipe in her machine… we laughed and said we’re ready for bread machines to come back into style again! SO SO good. And so easy to make.

    Loved this recipe! Do you happen to have a recipe that comes out like this using a sourdough starter? I have not found a sourdough recipe that comes out with a good texture in the bread machine. I really like using machine for everything but baking.

    1. We haven’t done a lot of experimenting with sourdough, but it is on our list of recipes we’d like to try!

  61. Now that I’ve prepared the dough in my bread machine (thanks for the recipe!), I’d like to bake it in a deep dish pizza, as you suggested. How should I modify the pizza recipe you linked to in order use this dough?

    1. You can continue to make it in the bread maker if you want to. Personally, I don’t think it comes out near as good in the bread machine. It turns out way too dry and the crust gets too hard.

    This is literally our favorite basic dough recipe! It is so delicious and extremely predictable! I’ve already made three batches in the last week and a half because my husband is very pleased.

    I’ve only made a couple minor tweaks to it which I did the first time just because I was feeling it and we have continued that.
    1) I add just 1/4 tsp of vanilla extract which just give it a tad bit of sweetness.
    2) I bake them into rolls and after they are cooked and I paint butter on them I also sprinkle them lightly with salt. They are Soo yummy!!! Highly recommend!!!
    If you refrigerate them they heat up. Beautifully!

      I took this recipe to a bread tasting activity at my church and it was the best one there! Moist and not crumbly, wonderful flavor! I want to try and reduce the sugar just a little bit so that it will taste a little better as plain sandwich bread, but this is now my go to recipe!! Thank you so much! 💜

  64. I have been making bread in my bread maker for a long time but I can’t get bread machine yeast I using regular yeast but my bread is not rising as much so the bread is denser. My question is do I put the yeast in first or do L add more at the end

    1. For this recipe I always add the yeast right after I add the flour. I hope this helps!

    2. If using active dry yeast, after putting the dough in the breadpan, place it in a warm area (75-85 degrees F) and let it rise for about 45 minutes before placing in the oven.

    This bread is delicious. The aroma, texture, and taste are far superior to bread baked in the bread machine. I had no issues with using bread flour and active yeast for bread machines. My loaf was perfect. It tastes like those sweet Hawaiian rolls.

    Followed the recipe, but I only had bread flour (2 cups bob’s artisan bread flour and 1 cup King Arthur’s organic bread flour) and bob’s active dry yeast.

    I wanted to try this recipe because I don’t really love bread machine bread (though it smells nice when done).

    This bread was amazing. I did the dough option, put in loaf pan, put in cold oven and baked for 30 min. Then brushed with melted butter when done. It was extremely delicious, and the texture and taste was far superior to finished loaves from the bread machine. My new way of making bread! And since this recipe uses the oven, I have a loaf in 2 hours as opposed to 3-1/2 hours.

    So delicious!

    Oh, I’m not sure if this makes an impact, but because I had salted butter, I only used 1 tsp of salt. My bread was perfect so not sure if that 1/4 tsp missing would have done much.

    1. If the recipe calls for 1 tablespoon quick rise yeast, should I use 2 packets since each packet is 1/4 ounce I think…

    Turned out awesome. What a cool recipe. Makes the best bread for sandwiches and dough for rolls or whatever you are in the mood for. Finally something my bread maker is good for and half the time from start to finish. Will share this one for sure. The One tablespoon of the yeast you call for in the recipe is 3 teaspoons and the quick rise packets are 2-1/4 teaspoons but since I live in a high altitude the packets work out great because high altitude baking needs less yeast. Tricky getting things to come out great every time in this elevation. Thanks again for such an awesome recipe.

    1. I live at sea level and also went for the one packet. Perfect taste and texture but as dough was quite sticky I was unable to smooth top by tucking sides down after “pouring” into bread pan. It came out looking a bit grotesque but even if it was ugly, it was mine and I loved it. BTW, I wish that you’d clear up the yeast quantity once and for all time. Is it a tablespoon or a packet?

      1. Since it is so hot where I live now, do you think I could use the BAKE function on my Ninja Foodie. I believe the standard is you take off 25° on the temp and reduce baking time by 10%. Has anyone done this and we’re successful?
