These Graham Cracker Cookies are a delicious and easy cookie to make when you just need something sweet but don’t want to make a whole production of it. They remind us so much of the popular Girl Scout Samoas, with sweet coconut and a hint of chocolate. They’re the perfect little treat to make with your kids, and are such a yummy after school snack. You’ve gotta love cookies that you can make with just a few simple ingredients. We actually made these cookies for a news show in Utah and everyone went crazy over them! They’re simple, made with ingredients you probably already have in your pantry, and are incredibly satisfying. Serve with an ice cold glass of milk, and you’ll have a tasty treat fit for any time of day! We promise, you’ll love them!
Four Ingredient Cookies
All you need for these scrumptious snacks are four simple ingredients: graham crackers, a can of sweetened condensed milk (we use fat free and it works great), some semi-sweet chocolate chips, and coconut. Simply mix together the first three ingredients and form into balls. Roll the balls into the coconut, flatten out just a little bit using the bottom of a glass or a spoon, and bake. The coconut toasts up beautifully and the chocolate melts just enough to make a gooey, yummy cookie!
Tips for the Best Graham Cracker Cookies
You could change up a few of the ingredients too! Switch out the chocolate chips for butterscotch chips, peanut butter chips, or white chocolate chips. Try drizzling a thin layer of glaze on the tops for an extra sweetness. To make a glaze, simply stir a little powdered sugar and milk together until there are no lumps. Serve hot right out of the oven, or chilled from the fridge. To store, keep them covered on the counter or in the refrigerator. They’ll stay nice and fresh for a couple of days. But, they never last that long at my house!
Frequently Asked Questions
An easy and delicious thing to add to these cookies to give a boost of protein would be chopped nuts! A sprinkle of a mixture of walnuts and pecans or other variations like macadamia nuts, or any other of your favorites would be perfect!

Yes!
These were fantastic and everyone came back for more! Thanks!
I’ve never seen these baked before, looking forward to trying that. We usually roll the balls( the crumbs, SCM, and chocolate chip) in coconut, then place in the freezer as a no-bake treat.
Ooh that sounds yummy too!
I’m waiting for these cookies to cool. In the information it says 12 servings but watching the video it appears that she is making about 20 cookies. I began mine with 12 cookies because that’s what the recipe seems to imply. However it looked like these were going to be way too big and I made 16 cookies instead. The last 4 were smaller and browned better. I think you should clarify your video and your instructions.
Sorry for the confusion – the number of cookies can depend on how big you want them to be. Hopefully yours still turned out! You could cook the bigger ones for just a bit longer next time.
Do you think these would turn out okay if I used butterscotch chips instead or chocolate?
Sure!
Can I use full cream condensed milk instead of the fat free condensed milk?
Absolutely!
These graham coconut cookies are a great hit! They’re also ready easy to make and will definitely cook them again!
These were sooo good!! Everyone in my family loved them, thanks for sharing 🙂
Sorry this didn’t work out for you. They definitely shouldn’t be coming out dry. I will look over the recipe and try to figure out what could have gone wrong…
What’s the volume of a regular can of condensed milk? Haha I live in a place where we use metric measurements…
A can of condensed milk is about 14 oz. (396g) Hope this helps!
Can you use graham cracker crumbs as opposed to crushing graham crackers?
Absolutely! That would be much easier 🙂
I can’t have chocolate. Have you tried these without?
Yes, you can easily make them without chocolate 🙂
Or make them with peanut butter or butterscotch chips
Yes! Either would taste great!
Can you freeeze them?
Yes, you should be able to freeze. Hope this helps!
Can’t wait to try these, they look yummy!
I made these tonite and they were delicious!!! Thanks!!
My grandmother used this recipe without the coconut (using full calorie ingredients) to make bars – a family favorite!
These look delicious!
What are the ounces in the can of Condensed Milk you are using in the recipe?
I did not see that listed.
And would so love to make these!!!
We usually use the 12 oz can but you would be fine using the 14 oz. Hope this helps!
Easy and delicious. Sinful!!!
They’re like magic cookie bars in cookie form! Definitely going to try these!!!
Wow, yummy! I decided to blend up some oatmeal to throw in with the graham cracker crumbs because I just love that flavor and…maybe now it can be my excuse for eating them for breakfast 😉 okay not every day – thanks for the recipe!
Yes, do you have the calorie count? Look delish!
I will have to try and plug it in and figure it out!
I figured if you made 24 cookies, it would be about 100 calories per cookie.
Cant i put something else asude from coconut?
We haven’t tried it with other ingredients, so I can’t speak to how it would change the texture of the cookie.
do you have a nutrition count for these? Thanks!
My two year old loved helping roll the cookies in coconut and smoosh them. He loved the cookie dough as well as the cookies (so did I).
It made a little over 2 dozen when I made them
How many does one recipe make?? Want to make them for my nieces dance recital!
